Tips for making the best muffins

- Let the batter rest for 10-15 minutes before adding to the muffin tin to bake. This one really makes a difference in how the muffin turns out. By letting the batter rest, the flour is able to hydrate. This results in a a more tender crumb and tall muffin top.
- Do not overmix your batter! Stir the dry and wet ingredients together until just combined. And gently fold on any fruit or chocolate chips. Overmixing can cause the muffins to become dense.
- Start by baking the muffins at a high heat and then reduce to lower heat after 5 minutes. This will help activate the leavening agents (baking powder/baking soda), giving more bakery style muffin tops.

How to prevent muffins from sinking in the middle?
There are few things you can do to make sure the muffins do not sink in the middle.

- Make sure your baking powder and/or baking soda are not expired before you start baking.
- Do not open the oven door if possible. It is ok to open the door the check on the muffins at the end of the baking time.
