There’s something about the smell of cinnamon and apples baking that is so cozy! And this glazed apple fritter bread with cinnamon streusel will make your kitchen smell like autumn! I created this recipe because I wanted all the warm, crave-worthy flavor of a bakery apple fritter, but in a slice-able loaf you can actually make on a weekday morning without a deep fryer in sight.
It’s the kind of bread that tastes like it took way more effort than it did. Perfect with your morning coffee, or honestly, just as good eaten standing at the counter before it’s even fully cooled.

Why You’ll Love This Recipe
Bakery flavor, no deep fryer required: All the warm cinnamon-apple flavor of a fritter, baked into an easy loaf.
Packed with apples: Cinnamon sugar apples diced apples in the center and layered on top means you’re never left with a plain bite.
Make-ahead friendly: tastes just as good the next day, making it an easy make-ahead breakfast or brunch centerpiece.
What I Love:
- Simple ingredients, no fancy equipment: Just one loaf pan and a couple of mixing bowls. And simple easy to find ingredients are used to make this apple fritter bread.

Ingredient notes and substitutions
Apples: Use a firmer baking apple like Honeycrisp or Granny Smith that holds its shape best here; softer varieties like Red Delicious can turn mushy in the oven.
Greek Yogurt: Greek yogurts works to add both moisture and a slight tangy flavor to the loaf. You can use any percent plain Greek yogurt. You can swap for sour cream or a dairy free plain yogurt if needed.
All-Purpose Flour: A simple all-purpose flour works best in this recipe. If you need to make the apple bread gluten-free, opt for a 1:1 gluten-free flour.
Neutral Oil: A neutral cooking oil adds moisture to the loaf. You can use avocado oil, canola oil, vegetable oil, or sunflower oil.

How to make apple fritter bread: Step-by-step instructions
- Preheat the oven to 350 degrees F. Grease or line with parchment paper a 9×5 bread pan.
- Prepare the diced apples by adding 1 tablespoon sugar with 1/2 teaspoon cinnamon. Stir together. Add in the diced apples and toss to coat all the apples. Set aside.
- In a medium mixing bowl, combine the flour, salt, baking powder and baking soda. Whisk together and set aside.
- In a separate large mixing bowl, combine the eggs and sugar. Beat together with a hand mixer or whisk until fully combined. Add the Greek yogurt, vanilla extract, and oil. Mix until well combined. Add the flour mixture into the wet ingredients and stir until just combined. Be careful not to over mix.
- To make the cinnamon streusel, add 1/3 cup flour, 1/4 cup brown sugar and 1/2 tablespoon of cinnamon to a medium bowl. Stir together. Add the softened butter and mix together with a fork your hands until the ingredients are fully combined.
- Scoop half the vanilla batter into the loaf pan, and gently spread out. Evenly add half of the diced apples over the batter. Sprinkle over half of the streusel over the apples. Scoop the remaining batter over the streusel and carefully spread out. Top with remaining diced apples and streusel.
- Bake the apple loaf for 50-60 minutes or until the batter is fully set and a toothpick comes out clean. Remove from the oven and let cool.
- While the bread is cooling, make the glaze by whisking the powered sugar, milk and vanilla extract together until smooth. The glaze should be slightly thick but you can a splash more milk if needed.
- Once the apple bread is cooled, drizzle the glaze on top of the loaf and enjoy!
Sara’s Tip
Bake time can vary a bit due to different ovens and external factors. Start on the low end and check on the loaf. Add a few minutes at a time until the bread is done if needed. You do not want to overbake the bread.

Recipe FAQs
What is the best type of apple to use?
Any firm baking apple works well in this bread. Honeycrisp, Granny Smith, and Braeburn are all great choices since they hold their shape while baking. I’d avoid softer apples like Red Delicious or McIntosh, since they tend to break down and turn mushy rather than staying tender-firm.
How do I store leftovers?
Store leftover bread tightly wrapped or in an airtight container at room temperature for up to 3 days, or in the fridge for up to 5 days. I prefer to store to store my bread in the fridge and just pop a slice in the microwave when ready to serve.
Can I freeze this bread?
Yes! Wrap the bread tightly (without the glaze) in plastic wrap and then foil, and freeze for up to 3 months. Thaw overnight in the fridge and then add the glaze fresh before serving.
Can I make this in muffin form instead of a loaf?
You can turn this apple bread into muffins. To do this, fill the muffin tins halfway with batter. Using half of the apples and streusel, add a layer of over the batter. Top with remaining batter and then the remaining apples and streusel. Bake at 400 degrees for 5 minutes, then reduce heat to 350 degrees for 13-17 minutes.
