Baked Buffalo Chicken Tacos with Avocado Crema

These baked buffalo chicken tacos with avocado crema have been on rotation in our house for dinner. They are easy, delicious, and packed with flavor! These crispy baked tacos are served with a creamy avocado crema made with Greek yogurt to give it a touch more protein! With just a handful of ingredients, you can have simple and tasty dinner on the table!

The buffalo sauce mixed with the shredded chicken gives these tacos a punch of spice and flavor. It is a twist on a classic baked chicken taco, and perfect for anyone who loves buffalo sauce! The tacos are stuffed with the buffalo chicken, sauteed onions and garlic and plenty of pepperjack cheese! They come out crispy, melty and hard to resist with the smooth avocado crema!

Why you will love these baked tacos

  1. They are easy to make and use no special ingredients! You can meal prep this dinner idea by using left over chicken (or making cooking it advance). By doing this, you can dinner on the table in about 25 minutes!
  2. They are customizable! If you have family members who do not love spicy food, like my kids, you can reserve some chicken that does not have buffalo sauce and swap out the cheese with cheddar. Bake the tacos all together, and you have an easy dinner that meets everyone’s personal taste in the family. You can add toppings as well based on personal preference, such as sour cream, lettuce, tomatoes and salsa.
  3. This recipe makes 6 tacos. But it would be really easy to double or triple this recipe to feed a larger group of people! And because they are baked, a large part of the cooking process is hands off!

Tips and Tricks for making these baked buffalo chicken tacos with avocado crema

Before you turn on the oven and shred your chicken, here are tips and tricks for success!

  1. I use chicken breast for this recipe, but you can use dark meat as well! Use whatever you have on hand or like!
  2. Do not forget to spray the tortillas with oil. This helps get them nice and crispy! I love avocado oil cooking spray for high heat cooking. If you do not have a cooking spray, you can brush some oil onto the tortillas.
  3. I personally find that freshly shredded cheese works better! Some pre-shredded cheese has additives to prevent clumping that can also affect the melting of the cheese. However, if you use pre-shredded cheese, the recipe will taste amazing so no worries if that is all you have! It just might not get as melty depending on the brand of cheese you use.
  4. After testing this recipe with both corn and flour tortillas, I found I like the flour tortillas better. Although the corn tortillas did work ok, they took a little longer to bake and were harder to handle. Several broke open during the baking process. If you prefer corn tortillas, go for it! Just plan on it taking longer in the oven and maybe being a little messier!
  5. Watch the tacos in the oven. There are few factors, such as tortilla brands and, oven temperature variation, these might take more or less time to get crispy! Check in on your delicious tacos after about 8-9 minutes to make sure they are not about to burn! Or go longer to achieve a beautiful color!

Baked Buffalo Chicken Tacos with Avocado Crema

Spicy and crispy baked chicken tacos with buffalo sauce. They are served with a creamy greek yogurt avocado crema.

Ingredients
  

  • 2 Cooked chicken breasts shredded
  • 6 Flour Tortillas
  • 1/3-1/2 C. Buffalo sauce depending on personal preference
  • 2 C. Pepper jack cheese shredded
  • 1 Tbsp. Avocado oil
  • 1 Onions sliced
  • 2 Garlic cloves minced

Avocado Crema:

  • 1 medium Avocado
  • 1/3 C. Greek yogurt
  • 1 lime juiced (about 1 Tbsp.)
  • 1/4 C. Cilantro
  • 1 garlic clove
  • 1/4 tsp. Cumin
  • 1/4 tsp. Onion powder
  • Salt to taste

Instructions
 

  • Preheat oven to 425 degrees.
  • Heat 1 tablespoon of avocado oil in a medium skillet. Once hot, add the sliced onion. Sauté for about 10 minutes, or until the onions are translucent and soft. Add in minced garlic and sauté additional 1-2 minutes.
  • In a medium bowl, combine the shredded chicken and buffalo sauce. Mix until fully combined.
  • Microwave tortillas for 15-30 seconds. Place them onto a baking sheet line with parchment paper. Spray all the tortillas with cooking oil and flip over. On one side of the tortilla start to build the taco by placing a little bit of cheese, chicken, sautéed onions and more cheese. Fold over other side and press firmly down so they tortilla stays closed against the cheese.
  • Place the tacos in the oven for Bake for 9-15 minutes or until the tortillas are golden brown.
  • While the tacos bake, make the avocado crema by placing the ingredients into a food processor and blending until smooth. Taste and adjust salt level to personal preference.
  • When the tacos are done, remove from oven and serve with avocado crema. Enjoy!
