Blueberry Cobbler

Cobblers are one of those desserts I cannot turn down. It does not matter what kind of cobbler it is, I’m all in! And this blueberry cobbler is no exception! It has a sweet and tart blueberry filling and is topped with a soft and buttery biscuit. A combination that will have you going back for seconds.

For this sweet summer treat, I really wanted to highlight the blueberries. After all, they are the star of this dessert! The filling is lightly sweetened with honey, and lemon juice and zest helps brighten the flavors. I love to add vanilla extract for a little more flavor. You will want to add the flour to the mixture to help it thicken a little bit. The filling is still plenty juicy from all the fresh blueberries, so do not skip this ingredient.

The biscuit topping is simple as well, and you will probably have a lot of the ingredients already in your pantry and fridge. Flour of course, a little bit of sugar to sweeten them up, buttermilk that keeps the biscuits tender, and cold butter to give them that perfect biscuit flavor and flaky texture. The baking powder helps the biscuits rise and the salt enhances all the flavors!

Tips and tricks for making this blueberry cobbler

Before you preheat your oven and wash up the blueberries, here are some helpful tips and tricks!

  1. I use fresh blueberries in this recipe, but you can use frozen blueberries! No need to defrost, just throw them in frozen!
  2. When making the biscuit topping, make sure your butter is COLD! The cold butter is what makes the flaky and tender texture.
  3. A stand mixer is helpful for making the biscuit, but if you do not have a stand mixer, do not worry! You can use a pastry cutter or even a fork to cut the cold butter into the flour.
  4. Bake time may vary slightly depending on external factors. You will know the cobbler is done when the blueberries are bubbly, and the biscuits are set. You should be able to take a fork and pull apart between the biscuits and not see any raw dough.
  5. You can store any leftovers covered in the refrigerator for about 3-4 days. Just place in the microwave to warm before serving.
  6. You can enjoy this summer treat with ice cream, whipped cream or greek yogurt (makes for a sweet and tasty breakfast)!

Blueberry Cobbler

A blueberry cobbler with sweetened with honey and topped with a soft and buttery biscuit.

Ingredients
  

Biscuit topping:

  • 1 1/2 C. Flour
  • 1/3 C. Sugar
  • 6 Tbsp. Butter. Cold and cut into pieces
  • 1 Tbsp. Baking powder
  • 1/2 C. Buttermilk
  • 1/2 tsp. Salt

Blueberry filling:

  • 5 C. Blueberries
  • 1/3 C. Honey
  • 1 lemon zested and juiced
  • 1 tsp. Vanilla extract
  • 2 Tbsp flour

Instructions
 

  • Preheat oven to 375 degrees. Add the blueberries, honey, lemon zest and juice, flour and vanilla to a pie dish (or 9×9 square baking dish). Stir well.
  • Whisk together the flour, sugar, salt and baking powder. Pour into a a stand mixer and and add butter. Mix until the butter is starting to incorporate into the the flour mixture and has broken into small pieces. Add in the milk and mix until just combined.
  • If you do not have a stand mixer, cut the butter in using a fork or pastry cutter.
  • Using a spoon or cookie scoop, place the biscuit dough onto the blueberries in small scoops. It is ok if there are small openings between the dough where you can see the blueberries. Bake for 40-45 minutes or until the biscuits are fully cooked through. Let cool slightly before enjoying
