Mango Bars with Graham Cracker Crust

This sweet summer treat is similar to the classic key lime bars or lemon bars, but with a mango twist! These mango bars with graham cracker crust is made with ingredients you probably have in the pantry and fridge! This simple summer dessert is easy to make and a great way to enjoy mangoes!

The sweet mangoes are blended into a puree and mixed with eggs, lime juice, flour and honey. This creamy custard sits on top of a buttery graham cracker crust that is made up of just graham crackers, sugar, butter and a pinch of salt. The end result is a perfect match! With a few simple ingredients, you will have the best summer dessert!

Tips and tricks when making these mango bars with a graham cracker crust.

Before you smash those graham crackers and puree the mangoes, here are some tips and tricks for success!

  1. Make sure to firmly press the graham cracker crust down before placing it in the oven. If you skip this step, you will end up a crumbly crust that falls apart.
  2. Sifting the flour for the custard will help prevent clumps. You can use a sifter or even a fine mesh strainer to achieve this. And even though I highly recommend sifting the flour for the best results, if you skip this step, it will not ruin the recipe.
  3. When it comes to baking this sweet summer treat, the bake time will vary depending on a variety of factors. You will know it is done when the custard no longer jiggles and looks set. It might still be tacky to the touch, but it will continue to set as it cools!
  4. The hardest part of this recipe? Waiting for it to cool completely before digging in! Make sure you let these mango bars fully cool, in the refrigerator for at least 1-2 hours before eating. It will be worth the wait!

Mango Bars with graham cracker crust

Ingredients
  

  • 1 C. Mango purée About 2 mangoes
  • 1/2 C. Honey
  • 2 Tbsp. Lime juice about 1 large lime
  • 3 eggs
  • 1/4 C. All-Purpose Flour

Graham cracker crust:

  • 1 1/2 C. Graham crackers finely crushed
  • 6 Tbsp. Butter
  • 2 Tbsp. Brown sugar
  • Pinch of salt

Instructions
 

  • To make the graham cracker crust, pour the crushed graham crackers into a bowl with the brown sugar and salt. Pour melted over and mix until fully combined.
  • Pour the crust onto greased 8×8 baking dish and spread out in an even layer. Firmly press down the crust. Bake for 10 minutes and remove from oven until the mango custard is ready to go in.
  • To make the mango custard, whisk the mango purée, lime juice, honey and eggs together. Sift in the flour. Mix until fully combined. Pour the custard into the crust. Bake 25-33 minutes or until the mango has firmed up.
  • Let cool and then place in the fridge for 1-2 hours. The bars should be cold when ready to serve. Store in refrigerator for about 3 days. Enjoy!
