Marinated Tomato and Ricotta Toast

Flavorful and juicy marinated tomatoes on a bed of basil ricotta cheese with a perfectly toasted piece of sourdough bread. A match made in heaven! This marinated tomato and ricotta toast is a summer recipe must try for all tomato lovers!

If you have never tried marinated tomatoes, take this as your sign to give it a try! They are packed with fresh flavors, and they are so easy to make. Using these marinated tomatoes really elevates the toast!

The ricotta on this toast is blended smooth with fresh basil, garlic, and olive oil. It is light and full of summer vibes. When paired with the seasoned marinated tomatoes, it comes together as the perfect summer toast.

Helpful tips for making this marinated tomato and ricotta toast

Before you get that sourdough bread toasted, and tomatoes sliced, here are some tips for success!

  1. Make sure get the bread nice and toasted! The tomatoes are pretty juicy so you will need a good toast to support all that goodness. You can either throw a thick piece of sourdough in the toaster or drizzle a piece with olive oil and toast it in a skillet. No matter the method you choose, make it sure it has a nice golden color!
  2. Speaking of toast, using an older bread works beautifully with this! I love turning my few days old sourdough into toast creations. The bread will hold up a little better to the toppings but no worries if you have is fresh bread.
  3. You will want to marinade the tomatoes for at least 30 minutes and up to 12 hours. I find the sweet spot is around 1-2 hours. The tomatoes have taken on the flavors but are not too mushy.
  4. Do not forget to add salt directly on top of the tomatoes after placing on the ricotta right before serving. This will make the flavors in the tomatoes pop even more.
  5. When making the ricotta, add all the ingredients into a food processor and blend. Give it a taste test. You can add more salt, basil or even garlic depending on your personal preference.

Marinated Tomato and Ricotta Toast

A sourdough toast loaded with basil ricotta and flavorful marinated tomatoes
Servings 2 pieces of toast

Ingredients
  

  • 4 large tomatoes sliced
  • 2 pieces of toasted sourdough bread
  • 4-5 fresh basil leaves roughly chopped
  • Salt and pepper to taste
  • 1 Garlic clove minced
  • 2 tsp. Balsamic vinegar
  • 1 tsp. Dijon mustard
  • 2 tsp. Olive oil
  • 1 Lemon juiced

Ricotta:

  • 1 C. Ricotta
  • 1 tsp. Olive oil
  • Handful of fresh basil 8-10 leaves
  • Salt to taste
  • 1 small garlic clove

Instructions
 

  • Combine the garlic, basil, olive oil, balsamic vinegar, Dijon mustard, lemon juice salt and pepper in a large dish. Stir together. Toss in sliced tomatoes. Cover and refrigerate for a minimum of 30 minutes and up to 12 hours (1-2 hours is the perfect time!).
  • To make the ricotta, combine the ricotta, olive oil, basil, salt, garlic clove and basil in a food processor. Blend until smooth. Taste and add more salt or basil as desired. Refrigerate until ready to serve.
  • To make the toast, spread a generous layer of the basil ricotta on a piece of toasted sourdough bread. Top with sliced tomatoes and a sprinkle of sea salt. Enjoy!
