The nutty parmesan cheese and fresh herbs are coated onto the sourdough bread after being dipped it into the egg mixture. The result creates a herby parmesan crust onto the French toast. It gives fresh and savory vibes in each bite!

How to make this savory French toast
- Make the egg mixture by combining the eggs, milk and pinch of salt together in shallow dish or pan. Wisk together until fully combined and set aside.
- Using a large plate or shallow dish, add the grated parmesan cheese, thyme, chives and parsley. Toss together.
- Taking one slice of sourdough bread at a time, dip it into the egg mixture, being sure to coat both sides. Go straight from the egg mixture to the herb parmesan cheese. Coat both sides of the bread. Repeat until all the bread has been coated in the both the egg mixture and herb parmesan cheese.
- Heat a skillet over medium heat and add a pat of butter. Once the butter has melted, add the savory French toast to the skillet. Cook until golden brown, then flip and brown the other side. If the toast is browning too quickly, reduce the heat to medium-low. You will want to make sure the egg mixture is fully set throughout the sourdough bread. Repeat until all the savory toast has been cooked.
- Remove from heat and serve with butter and pinch of salt if desired. You can enjoy it on its own or with eggs or salad.
Ingredients and substitutions
Sourdough bread: I love sourdough bread with this recipe! The hearty bread and flavor works so perfectly with the herbs and parmesan cheese. But you could use a French bread or another hearty loaf in place of sourdough.
Eggs: Eggs are used to create the classic egg mixture to soak the bread it.
Milk: Milk is mixed with the eggs for the egg mixture. You can use any percent milk. I use 2% milk for this recipe.
Herbs: I used a combination of chives, parsley, and thyme for the fresh herbs. But you can switch it up to whatever herbs you love or have on hand. Oregano, sage, rosemary or basil would also be great choices. And even though I recommend fresh, you could use dried herbs in place of the fresh if needed. If you use dried herbs, you will want to decrease the amount to about 1 teaspoon per herb you use.
Grated parmesan cheese: Grated parmesan cheese is mixed with the the fresh herbs to create a crust on the savory toast.
Butter: You will need a little pat of butter to cook the French toast in the skillet. You could use a drizzle of oil instead of the butter.
Salt: Add a pinch of salt to the egg mixture to enhance flavors. You can also add salt to taste to the toast itself after it is cooked if you wish!
What to serve with savory French toast?
You can enjoy this savory French toast on its own or pair with a fried or scrambled eggs to for added protein.
Or you can add a fresh side salad, marinated tomatoes or even pickled onions for a healthy and nourishing breakfast.

Expert tips
- Keep the heat on the skillet at a medium to medium-low. You want the French toast to get a nice golden brown color while making sure the egg custard is fully cooked through the sourdough bread. Adjust your temperature as needed.
- If possible, grate your own parmesan cheese! Pre-shredded cheese can have an anti-caking agent that interfere with the cheese melting.
- Use whatever herbs you have on hand! You can use basil, oregano, chives, parsley, thyme or sage. And although I recommend going with fresh herbs, you can swap them out for dried.
- Do not skip on the salt for the egg custard! The salt helps enhance all the flavors.
- You can enjoy this savory herb French toast immediately or store any leftovers in the fridge, in an air tight container. Just reheat in the microwave until heated through when ready to enjoy. Leftovers should last up to 3 days.
