Puff Pastry Pineapple Rings

Not every recipe has to be complicated. They can be simple, yet pack a punch. They can be easy to make, but still make an impact. And they can only take a few ingredients, but taste complex. That is how I feel about these puff pastry pineapple rings. They are crispy from the puff pastry, tart from the pineapple and sweet from chocolate.

Even though these tasty pineapple treats are really more of idea than a recipe, I do have few helpful tips before whipping this summer dessert together.

  1. Make sure to keep the puff pastry cold! This one is really important because the puff pastry needs to be cold do its thing in the oven. If you have any pause while making these, make sure to put the puff pastry in the fridge.
  2. A pineapple corer is the best tool to get the pineapple in a perfect, and even circle. However, if you do not have one, no worries! You can peel the pineapple, then cut it into 1/4 to 1/2 inch slices. You then can cut the core out from the pineapple with a paring knife or use a 1 inch cookie cutter, creating the circle you will need to make these.
  3. These puff pastry pineapple rings truly taste best if enjoyed immediately. They will save but its hard to keep the puff pastry crispy.
  4. Lastly , do not skip on the chocolate! The pineapples can become a little tart and the chocolate helps round it out. You can choose how little or how much chocolate you want.

Puff Pastry Pineapple Rings

Ingredients
  

  • 1 Pineapple
  • 1 sheet of Puff-pastry
  • 1 egg

Chocolate drizzle

  • 3/4 C. Chocolate chips
  • 1 tsp. Coconut oil

Instructions
 

  • Preheat oven to 400 degrees. Defrost puff pastry according to package directions. Use a pineapple corer to cut the pineapple into rings. If you do not have a corer, remove the skin with a knife. Lay the pineapple down and cut 1/4-1/2 inch slices. You should get 6-7 pineapple slices. You can remove the core with a 1 inch cookie cutter or you can remove it with a paring knife.
  • Lay out the puff pastry and gently roll out. Cut 6-7 strips on the longest edge (cut as many pineapple rings you have). Using one puff pastry strip, take the pineapple rings and start wrapping the pineapple rings. You can gently pull the puff pastry as needed. You should be able to get 4 wraps, but pineapple be showing. Place the wrapped pineapple onto a baking sheet with parchment paper. Repeat until all the pineapple rings have been wrapped. If you wish, you can brush the puff pastry with an egg.
  • Place the oven and bake 20-25 minutes or until the puff pastry starts to turn golden brown. Remove from the oven.
  • While the pineapple rings bake, combine the chocolate chips and coconut in a microwave safe bow. Place in the microwave for 30 seconds. Remove and stir. Place back in the microwave for 15 seconds. Stir. If the chocolate is melted fully, microwave for additional 15 seconds.
