This Mediterranean inspired bagel breakfast sandwich is simple to make and packs a punch with flavor! The sandwich has layers of a dill and olive cream cheese, sliced tomatoes, red onion, arugula, and a fried egg, all between a bagel. The breakfast sandwich comes together in under 20 minutes, making it the perfect breakfast for busy mornings.
I am on a mission to find all the different ways to make new and tasty egg sandwiches! Because they are such a hearty and delicious way to start the day. I have been a little obsessed with my jalapeno popper egg sandwich, but it is time to add a new recipe into the rotation. And this Mediterranean forward breakfast sandwich is the perfect breakfast addition.
The cream cheese sauce with dill, olives, lemon juice, garlic, Greek yogurt and olive oil has so much flavor! It adds the creaminess to this sandwich and compliments the other ingredients. You can also customize this sandwich to your personal preference!

Customizable: Only like your eggs a certain way? No problem! You can make the eggs however you love them for this sandwich! Scrambled, over easy or sunny side up! And you do not need to use a bagel! This sandwich would be great on sourdough bread, English muffin, or your bread of choice.
Hearty: This sandwich has it all, protein, carbs, and veggies, to help keep you full for a busy day!
Flavorful: The cream cheese spread on this sandwich is really the star of the show because it packs so much FLAVOR!


What you will need
Egg: You will need 1 egg per sandwich, if making the egg sunny-side-up or over easy. Or you can use about 2-3 eggs if scrambling.
Bagel: The bread that holds all the goodness together. You can swap for any other bread you love!
Red onion: Pairs perfectly with the all the flavors. You can opt sweet or white onion instead if you wish.
Tomatoes: A large slicing tomato, such a beefsteak tomatoes, heirloom, or brandywine tomatoes.
Salt and pepper: Enhances the flavors.
Cream cheese: Makes up the cream cheese spread.
Greek Yogurt: Just a touch of tangy flavor to the cream cheese.
Green olives: Olives are blended into the cream cheese to create a unique mediterranean style breakfast sandwich. You could swap the green olives with your favorite olives.
Fresh Dill: Fresh dill really adds a ton of flavor to the cream cheese spread. Fresh is best but you could use dried if needed. When going with dried, use about 1/2-1 tsp., depending on personal preference. You could add more if you wish.
Lemon juice: Add some bright, citrus flavors to the cream cheese spread.
Garlic clove: Gives a touch of garlic to the cream cheese.
Olive oil: Helps thin out the cream cheese just a touch.

Tips and tricks
- You can make the cream cheese spread in advance to save time on busy mornings. Just follow the directions for the cream cheese spread and store it in the refrigerator in an airtight container for up to 3 days.
- I prefer to toast the bagel (or bread of choice) before building the sandwich, but you can skip this step if you wish. The bagel is hearty enough to hold up to the ingredients, so toasting is optional.
- Add all the ingredients for the cream cheese spread into the food processor EXCEPT the salt and pepper. Blend and taste, then adjust the salt and pepper to personal preference. I find the olives pack enough salt that I do not need to add any or much.
- Speaking of salt, add just a sprinkle over the tomatoes when building the sandwiches. The salt enhances the flavors in the tomatoes and makes them pop.
- Enjoy this sandwich immediately after assembly!

Mediterranean Bagel Breakfast Egg Sandwich
Ingredients
Cream cheese olive oil and dill spread:
- 4 oz. Cream cheese (softened)
- 3 Tbsp. Greek yogurt
- 1/4 C. Green Olives
- 1 Tbsp. Olive oil
- 1 Tbsp Dill (add more or less based on personal preference)
- 1 Garlic clove
- 1/2 of a Lemon (juiced)
- Salt and pepper to taste
Sandwich
- 1 Egg
- Handful Arugula
- Red onion (sliced)
- Tomato (sliced)
- 1 Bagel (toasted)
Instructions
- To make the dill and olive cream cheese spread, combine all the ingredients together into a food processor or blender. Blend until smooth. Taste and add salt and pepper to personal preference. Set aside or place in the refrigerator until ready to build the sandwich,
- To make the sandwich, add a drizzle of olive oil or pat of butter to a skillet over medium heat. Add egg(s), cover, and cook until desired egg style. If you want the egg(s) to be over easy, you can flip the egg to help cook the yolk a little more.
- Spread a generous layer of the cream cheese spread to the top and bottom of the toasted bagel. Add the tomatoes slices (sprinkle with a touch of salt over the tomatoes to boost the flavor) , red onion, fried egg, and arugula. Top the bagel and enjoy immediately!
