Mediterranean Bagel Breakfast Egg Sandwich

A Mediterranean inspired bagel breakfast sandwich with a dill and olive cream cheese, fried egg, red onion, tomatoes and arugula. An easy and hearty breakfast recipe.

Ingredients
 

Cream cheese olive oil and dill spread:

  • 4 oz. Cream cheese (softened)
  • 3 Tbsp. Greek yogurt
  • 1/4 C. Green Olives
  • 1 Tbsp. Olive oil
  • 1 Tbsp Dill (add more or less based on personal preference)
  • 1 Garlic clove
  • 1/2 of a Lemon (juiced)
  • Salt and pepper to taste

Sandwich

  • 1 Egg
  • Handful Arugula
  • Red onion (sliced)
  • Tomato (sliced)
  • 1 Bagel (toasted)

Instructions
 

  • To make the dill and olive cream cheese spread, combine all the ingredients together into a food processor or blender. Blend until smooth. Taste and add salt and pepper to personal preference. Set aside or place in the refrigerator until ready to build the sandwich,
  • To make the sandwich, add a drizzle of olive oil or pat of butter to a skillet over medium heat. Add egg(s), cover, and cook until desired egg style. If you want the egg(s) to be over easy, you can flip the egg to help cook the yolk a little more.
  • Spread a generous layer of the cream cheese spread to the top and bottom of the toasted bagel. Add the tomatoes slices (sprinkle with a touch of salt over the tomatoes to boost the flavor) , red onion, fried egg, and arugula. Top the bagel and enjoy immediately!
