Spiced Gingerbread Loaf with Greek Yogurt

This easy and flavorful spiced gingerbread loaf with Greek yogurt is lightly sweetened, and is packed with warm spices. You only need about 10 minutes of prep time and a handful of easy to find ingredients to a make this festive quick bread recipe. And added bonus, it will make your kitchen smell like the holidays while it is baking!

If you love gingerbread, this recipe is must bake this winter. It is so moist and is only sweetened with the molasses and maple syrup. Plus, the added Greek yogurt adds a touch of protein, roughly 8 grams per serving. This gingerbread was a big hit with my little kids and made for a delicious breakfast and snack during the busy holiday season.

Easy: This recipe does not require any fancy equipment or ingredients. You just need two mixing bowls, a loaf pan and whisk. The hardest part is waiting to for the loaf to bake!

Lightly sweetened: This gingerbread loaf is sweetened with molasses and maple syrup. The loaf has just enough sugar to to add to the flavor but is not as sweet as a cake. Each serving has roughly 9 grams of sugar compared to the average of 20 or more grams of a gingerbread cake. This allows for flexibility for you to add more sweetness if you wish with whipped cream or frosting after baking or enjoy as is.

Ingredients and variations

Greek Yogurt: Plain Greek yogurt adds moisture as well as some protein to this loaf. You could swap it for a plain diary free yogurt or sour cream if you wish.

Neutral Oil: A neutral oil, such as avocado, canola or vegetable oil, keeps this gingerbread loaf moist.

Eggs: Eggs provide structure.

Maple Syrup: Lightly sweetens the bread. You can swap for honey.

Molasses: Provides sugar and that classic gingerbread flavor. I do not recommend swapping the molasses out as it provides thar rich gingerbread flavor profile.

Vanilla Extract: Adds flavor to the loaf.

All-Purpose Flour: A simple all-purpose flour is all you will need. If you need to make this recipe gluten-free, use a 1:1 ratio gluten-free flour.

Salt: Enhances the flavors.

Baking Powder & Soda: The leavening agents used in the bread.

Spices: Cinnamon, ground ginger, cloves and nutmeg are the warm spices used in this gingerbread loaf.

How to make gingerbread loaf with Greek yogurt

  1. Preheat the oven to 350 degrees F. Grease or line a 9×5 loaf pan with parchment paper.
  2. In a medium bowl, combine the flour, salt, baking powder, baking soda, ginger, cinnamon, cloves and nutmeg. Mix together and set aside.
  3. In a separate large mixing bowl, add the eggs, oil, Greek Yogurt, maple syrup, molasses, and vanilla extract. Whisk together until smooth and fully combined.
  4. Add the dry ingredients into the wet and stir until just combined.
  5. Pour the gingerbread batter into the greased or parchment paper lined loaf pan. Bake for 40-50 minutes or until the batter is fully set and tooth pick comes out clean when inserted into the center of the loaf. Let cool slightly and enjoy!

What to serve with gingerbread loaf

You can enjoy this gingerbread loaf by itself (or keep it simple with a little butter) or switch it up a little depending on what you are in the mood for.

This festive quick bread would be amazing sweet treat served with a savory breakfast, such as this roasted potato egg bake. Or even just with a dollop of yogurt to add extra protein.

Or if you want to sweeten this bread up, you could add a cream cheese frosting, whipped cream (my kids personal favorite) or even ice cream. The gingerbread loaf itself it not too sweet so adding a little bit sugar is perfect if you have a sweet tooth without it being too sweet.

Storage instructions

You can store this loaf at room temperature in an air tight container for about 3 days or in the fridge for about 4 days.

You can also freeze the loaf up to 3 months. To freeze the bread, let cool completely. You can slice it or keep the loaf whole. Wrap tightly with plastic wrap followed by foil. Label the date on the foil and freeze. When ready to eat, you can defrost in the refrigerator.

Expert tips

  1. Lining your loaf pan with parchment paper will make for easy clean up! But if you do not have parchment paper, just be sure to grease your loaf pan well to prevent the gingerbread loaf from sticking.
  2. A metal loaf pan works the best for quick breads. Avoid glass pans that might cause the crust of the bread to brown too much.
  3. Do not over mix the dry and wet ingredients together. You will want to stir just until combined. Overmixing can cause a dense loaf.
  4. Watch the bake time carefully. Due to external factors and different ovens, the time it takes for this gingerbread loaf cake to bake will vary. Start low and check on the loaf. When done, the batter will be fully set and tooth pick will come out clean when inserted into the center of the loaf.
