Spiced Gingerbread Loaf with Greek Yogurt

A cozy gingerbread loaf made with Greek yogurt for extra moisture and protein. You only need about 10 minutes of prep time to get this festive quick bread into the oven. Makes for a delicious breakfast, snack or dessert with a scoop of ice cream.

Ingredients
 

  • 1 C. Plain Greek Yogurt
  • 1/2 C. Neutral oil (such as avocado, canola or vegetable oil)
  • 2 eggs
  • 1/4 C. Maple Syrup
  • 1/4 Molasses
  • 1 tsp. Vanilla extract
  • 1 3/4 C. All-purpose Flour
  • 1/2 tsp. Salt
  • 1 tsp. Baking powder
  • 1/2 tsp. Baking soda
  • 1 tsp. Ground Ginger
  • 2 tsp. Cinnamon
  • 1/4 tsp. Cloves
  • 1/4 tsp. Nutmeg

Instructions
 

  • Preheat the oven to 350 degrees F. Grease or line a 9x5 loaf pan with parchment paper.
  • In a medium bowl, combine the flour, salt, baking powder, baking soda, ginger, cinnamon, cloves and nutmeg. Mix together and set aside.
  • In a separate large mixing bowl, add the eggs, oil, Greek Yogurt, maple syrup, molasses, and vanilla extract. Whisk together until smooth and fully combined.
  • Add the dry ingredients into the wet and stir until just combined.
  • Pour the gingerbread batter into the greased or parchment paper lined loaf pan. Bake for 40-50 minutes or until the batter is fully set and tooth pick comes out clean when inserted into the center of the loaf. Let cool slightly and enjoy!
