This Strawberry loaf with strawberry glaze is a sweet vanilla cake base packed with fresh strawberries. The easy loaf cake is then topped with a strawberry glaze to boost the strawberry flavor and add another layer of moisture. This strawberry loaf is the perfect sweet breakfast, snack or dessert.

Seasonal ingredients: This loaf cake features lots of fresh strawberries, taking full advantage of the seasonal fruit. Of course you can make this recipe year-around, but I love to focus on seasonal ingredients whenever I can.
Flavorful: This vanilla loaf cake packed with fresh strawberries and a strawberry glaze has the perfect amount of sweetness and is so GOOD! It is a family favorite every time I make this strawberry bread.
What you will need to make this loaf cake
Greek yogurt: Greek yogurt adds moisture to this strawberry bread. You can swap it for regular yogurt or sour cream if needed.
Buttermilk: Buttermilk makes this bread really tender. In a pinch, you can make your own buttermilk by adding 1/2 cup of milk with 1/2 tablespoon of vinegar or lemon juice. Stir and let stand for 5-10 minutes before mixing it into the batter.
All-Purpose Flour: No fancy flour needed! If you need to make this recipe gluten-free, replace the all-purpose flour with a 1:1 ratio gluten-free flour.
Neutral oil: Adds moisture to the bread. Go with a neutral tasting oil, such as avocado, canola or vegetable oil.
Eggs: Provides structure to the batter.
Maple Syrup or honey: Adds the perfect amount of sweetness to the vanilla batter.
Vanilla Extract: Gives the batter a vanilla flavor that pairs with the strawberries.
Baking powder and baking soda: The leavening agents used to help the bread rise.
Salt: Enhances the flavors in the sweet bread.
Fresh Strawberries: Fresh strawberries are both cut into bite sized pieces and placed on top of the bread (if you wish but optional). I highly recommend fresh strawberries instead of frozen.
Strawberry Glaze: The simple glaze if made up of fresh strawberries, powdered sugar and vanilla extract.
Tips and tricks
This strawberry loaf is so moist and with the glaze, you do not have to worry about a dry bread. But before you get baking, here are some helpful tips to successfully make this delicious bread.
- Remember that every oven is a little different and there are external that can affect the back time. You will want to start low on the bake time, and check on the strawberry bread. Pull it out of the oven just as the batter sets and you will have that perfectly tender loaf your aiming for.
- Fresh strawberries are the best choice for this recipe. But if you need to use frozen, you can defrost them and then slice into bite-sized pieces.
- The glaze makes this bread so moist! But it can mean that it will not as long at room temperature. To extend the self life, you can store this bread in the fridge for 3-4 days in an air-tight container.
- For easy clean up, use parchment paper in the bread pan! If you do not have parchment paper, be sure to grease the pan well prior to adding the batter.

Strawberry loaf with strawberry glaze
Ingredients
- 1/3 C. Greek Yogurt
- 1/2 C. Buttermilk
- 1 ¾ C. All-purpose Flour plus 2 Tbsp. To toss strawberries in
- 1/3 C. Neutral oil (I used avocado oil)
- 1/2 tsp. Salt
- 2 Eggs
- 1 tsp. Baking soda
- 1 tsp. Baking powder
- 3/4 C. Maple syrup
- 1 tsp. Vanilla extract
- 1 C. Strawberries (Diced-plus more to top bread)
Strawberry Glaze
- 1/2 C. Strawberries (sliced )
- 1 C. Powdered Sugar
- 1 tsp. Vanilla extract
Instructions
- Preheat oven to 350 degrees. Mix flour, baking soda, baking powder and salt together in a mixing bowl. In a separate bowl, combine the eggs, buttermilk, oil, Greek yogurt, maple syrup and vanilla extract. Mix until fully combined. Stir dry ingredients into wet and mix until just combined. Toss diced strawberries into a 2 Tbsp of flour and coat. Fold in strawberries to the batter. Bake 45-55 minutes or until set and toothpick comes out clean.
- To make the glaze, add the strawberries, powdered sugar and vanilla extract to a food processor. Blend until smooth. Drizzle glaze onto of cooled strawberry bread. Enjoy!
