1 ¾C.All-purpose Flour plus 2 Tbsp. To toss strawberries in
1/3C.Neutral oil(I used avocado oil)
1/2tsp.Salt
2Eggs
1tsp.Baking soda
1tsp.Baking powder
3/4C.Maple syrup
1tsp.Vanilla extract
1C.Strawberries(Diced-plus more to top bread)
Strawberry Glaze
1/2C. Strawberries(sliced )
1C.Powdered Sugar
1tsp.Vanilla extract
Instructions
Preheat oven to 350 degrees. Mix flour, baking soda, baking powder and salt together in a mixing bowl. In a separate bowl, combine the eggs, buttermilk, oil, Greek yogurt, maple syrup and vanilla extract. Mix until fully combined. Stir dry ingredients into wet and mix until just combined. Toss diced strawberries into a 2 Tbsp of flour and coat. Fold in strawberries to the batter. Bake 45-55 minutes or until set and toothpick comes out clean.
To make the glaze, add the strawberries, powdered sugar and vanilla extract to a food processor. Blend until smooth. Drizzle glaze onto of cooled strawberry bread. Enjoy!
