This protein chocolate cottage cheese mousse Toast with Air Fryer bananas has quickly become one of my favorite morning staples. The cottage cheese gets whipped into a light, creamy mousse that you’d never guess was packed with protein. Topped with warm, caramelized banana slices cooked in the air fryer, all piled on thick-cut sourdough toast. It is the perfect family friendly breakfast for busy mornings.

Ingredients and substitutions

Cottage Cheese: You can use your favorite cottage cheese brand to make the the chocolate mousse.

Honey: Adds sweetness to the whipped cottage cheese and helps caramelize the bananas.

Vanilla: Adds to the flavor of the cottage cheese mousse.

Cocoa Powder: Makes the chocolate mousse!

Banana: You will need one banana.

Oil: A little bit of high heat oil is used on the bananas to cook them in air fryer. Avocado oil is my favorite.

Cinnamon: Helps adds to the flavor of the bananas.

Sourdough bread: A hearty slice of toasted sourdough bread holds all the goodness. You can use another bread, just make sure it is hearty enough to hold up to all the toppings. Some good swaps are ciabatta bread, or a rustic bread loaf.

Almond slices: This is optional but adds to the texture of the toast. You can use almond, walnuts or pecans.

How to make this cottage cheese toast

  1. To make the chocolate cottage cheese mouse, combine the cottage cheese, honey, cocoa powder and vanilla extract into a food processor or blender. Blend until smooth. Taste and adjust to personal preference with cocoa powder and honey. Set aside until ready to build the toast.
  2. To make the air fryer banana, preheat air fryer to 375 degrees. Slice the bananas on a piece of parchment paper. Drizzle over oil and honey. Evenly sprinkle over the cinnamon. Place in the air fryer, on the parchment paper, for 7-10 minutes. Be sure the parchment paper is small enough that it does not touch the heating elements in the air fryer. If you do not have parchment paper, slice the banana in half lengthwise, drizzle with oil, honey and cinnamon and cook directly in the air fryer until golden brown.
  3. To build the toast, spread the cottage cheese chocolate mousse over the a slice of toast bread. Top with the cooked banana. Sprinkle over almond slices or nuts of choice and enjoy!

Sara’s Tip

No air fryer? No problem. You can caramelize the bananas in a pan on the stove. Just add the oil (or a pat of butter) to a skillet over medium heat. Add in the banana slices and sprinkle over cinnamon and drizzle over honey. Toss to coat. Let the bananas cook on one side for about 4 minutes. Flip and cook the other side. Remove from heat and top over your cottage cheese chocolate mouse toast!

You can make the cottage cheese chocolate mouse in advance to save time. Just follow the directions for the chocolate mouse, and store in an air tight container in the refrigerator up to 3 days. Wait to make the bananas until ready ready to eat.

  • 1 Tbsp. Honey (plus more to drizzle over banana)
  • 1/4 tsp. Vanilla extract
  • 1 Tbsp. Cocoa powder
  • 1 Banana

  • 1/4 tsp. Cinnamon
  • 1 slice Sourdough bread (toasted)
