Chocolate Cottage Cheese Mousse Toast with Air Fryer Bananas

A easy and flavorful breakfast toast topped with protein chocolate cottage cheese mousse and air fryer bananas. You only need 15 minutes to make this simple and family friendly breakfast recipe.

Ingredients
 

  • 2/3 C. Cottage cheese
  • 1 Tbsp. Honey (plus more to drizzle over banana)
  • 1/4 tsp. Vanilla extract
  • 1 Tbsp. Cocoa powder
  • 1 Banana
  • 1 tsp. high heat oil (avocado or grapeseed)
  • 1/4 tsp. Cinnamon
  • 1 slice Sourdough bread (toasted)
  • Almond slices (optional)

Instructions
 

  • To make the chocolate cottage cheese mouse, combine the cottage cheese, honey, cocoa powder and vanilla extract into a food processor or blender. Blend until smooth. Set aside until ready to build the toast.
  • To make the air fryer banana, preheat air fryer to 375 degrees. Slice the bananas on a piece of parchment paper. Drizzle over oil and a little honey. Evenly sprinkle over the cinnamon. Place in the air fryer, on the parchment paper, for 7-10 minutes. Be sure the parchment paper is small enough that it does not touch the heating elements in the air fryer. If you do not have parchment paper, slice the banana in half lengthwise, drizzle with oil, honey and cinnamon and cook directly in the air fryer until golden brown.
  • To build the toast, spread the cottage cheese chocolate mousse over the a slice of toast bread. Top with the cooked banana. Sprinkle over almond slices or nuts of choice and enjoy!
