These appetizers are not only healthy and easy to make, they are also so addictive! They remind me a little bit of mini bite-sized tacos, but with a sweet potato shell and stuffed full of spicy avocado. Seriously, they will become a favorite you’ll want to make over-and-over again!

Ingredients you need to make this easy sweet potato and avocado salsa recipe
Sweet Potatoes: One large or two small sweet potatoes are the base to these bites with avocado salsa.
Avocado Oil: You will need a high heat oil to coat the sweet potatoes before air frying. I love using avocado oil, but you can use any high heat oil of choice!
Spices: The sweet potatoes are coated in cumin, salt, smoked paprika, and chili powder before cooking. The spices perfectly complement the avocado salsa.
Avocado: Avocados from Chile are the star of the avocado salsa. They add nutrients and a creamy texture to the recipe.
Tomatoes: Fresh tomatoes pair perfectly with the avocados in the salsa. Cherry and grape tomatoes work well in this recipe, but you can use any variety of tomato you wish.
Onion: White, yellow or sweet onions add flavor and texture to the avocado salsa.
Cilantro: Fresh cilantro adds flavor to the salsa. You can omit it you prefer.
Jalapeno: A jalapeno gives the avocado salsa a nice kick of spice and works perfectly with the sweet potato. If you do not like spice, you can omit or only use 1/2 of a jalapeno to reduce the heat level.
Lime Juice: The lime juice brings acidity to the avocado salsa that brightens all the flavors. Start with 1/2 of lime, and taste. Add the other half (or more) to personal preference.
Salt: Salt enhances the flavor of the avocado salsa and the sweet potatoes. For the avocado salsa, add to personal taste!

Tips and tricks when making these sweet potato bites
1. Do not overcrowd the air fryer with the sweet potato rounds. You might need to do 2-3 batches depending on the size of your air fryer.
2. If you do not have an air fryer, you can roast the sweet potatoes in the oven. To do this, place the sweet potato rounds after being seasoned onto a baking sheet with parchment paper. Roast at 425 degrees F. for 30-35 minutes or until the sweet potato’s edges are golden brown.
3. The sweet potato rounds will have brown edges and will tender when done cooking. They do have some flexibility to them and are not a chip like texture.
4. You can make the avocado salsa in advance and store it in the fridge in an airtight container. For best results, only store in the refrigerator for a few hours before plating with the sweet potato rounds.
5. If you have left over avocado salsa, you can save it in the refrigerator for about 24 hours to enjoy with chips, crackers or another meal.

Air Fryer Sweet Potato Bites with Avocado Salsa
Ingredients
- 1 large sweet potato thinly sliced (or 2 small sweet potatoes)
- 1 Tbsp. Avocado oil
- 1 tsp. Cumin
- 1/2 tsp Salt
- 1 tsp. Smoked paprika
- 1/2 tsp. Chili powder
Avocado Salsa
- 1-2 Avocados from Chile diced (1 large or 2 small avocados)
- 1/2 C. Tomatoes diced
- 1/4 of an Onion finely chopped, yellow, sweet or white
- 1 Jalapeño finely chopped
- Handful Cilantro chopped
- Salt to taste
- 1/2-1 lime juiced
Instructions
- Preheat air fryer to 390 degrees F. (Or 400 degrees depending on air fryer).
- Peel sweet potato. Slice the sweet potato into 1/4- to 1/3-inch-thick rounds.
- In a medium bowl, add the avocado oil, cumin, salt, smoked paprika, and chili powder. Add the sliced sweet potatoes and toss to fully coat all sides of the sweet potato rounds.
- Place the seasoned sweet potatoes into the preheated air fryer, making sure not overlap the sweet potatoes. Air fry the sweet potatoes for about 10-13 minutes or until the edges are starting to brown and the sweet potatoes are tender.
- When the sweet potatoes are in the air fryer, make the avocado salsa by adding the avocado, tomatoes, onion, jalapeño, cilantro, and 1/2 of lime juice to a medium bowl. Mix together. Taste and add more lime juice to personal taste. Stir in salt to taste.
- When the sweet potatoes are done air frying, place onto a large plate. Top with each sweet potato rounds with a small spoonful of avocado salsa and serve immediately. Enjoy!
