Instructions
Preheat air fryer to 390 degrees F. (Or 400 degrees depending on air fryer).
Peel sweet potato. Slice the sweet potato into 1/4- to 1/3-inch-thick rounds.
In a medium bowl, add the avocado oil, cumin, salt, smoked paprika, and chili powder. Add the sliced sweet potatoes and toss to fully coat all sides of the sweet potato rounds.
Place the seasoned sweet potatoes into the preheated air fryer, making sure not overlap the sweet potatoes. Air fry the sweet potatoes for about 10-13 minutes or until the edges are starting to brown and the sweet potatoes are tender.
When the sweet potatoes are in the air fryer, make the avocado salsa by adding the avocado, tomatoes, onion, jalapeño, cilantro, and 1/2 of lime juice to a medium bowl. Mix together. Taste and add more lime juice to personal taste. Stir in salt to taste.
When the sweet potatoes are done air frying, place onto a large plate. Top with each sweet potato rounds with a small spoonful of avocado salsa and serve immediately. Enjoy!
