Air Fryer Tomato and Mozzarella Sandwich

Summer tomatoes are in full swing, and this air fryer tomato and mozzarella sandwich is the perfect way to enjoy them! And the sandwich itself is really simple. A crispy “fried” tomato, fresh mozzarella cheese, and an herbed mayo. It is an easy sandwich bursting with summer flavors!

This sandwich makes for a tasty lunch (or even dinner) and can be made in about 20 minutes. If you are looking to save time, you can make the herbed mayo in advance and store it in the fridge until ready to assemble the sandwich.

Another fun option for enjoying these air fryer tomatoes if you just want a snack, is to take the bread out of this recipe. I know, it’s not a sandwich anymore! But if you take the crispy air fryer tomato, place a dollop of the herbed mayo, and then top with a slice of fresh mozzarella, you will have a delicious bite! This can be an appetizer, snack, or even part of a lunch!

Tips and tricks for making this air fryer tomato and mozzarella sandwich

Before you start slicing those tomatoes, and pull out the air fryer, here are some helpful tips and tricks!

  1. Use good quality bread. I feel like this one is important for this sandwich because it is a simple sandwich, and the bread does matter! Even with all the fresh flavors, having good bread will make this sandwich so much better! I love using sourdough bread but use your favorite to whip this sandwich up!
  2. If you do not have an air fryer, you can still make this in the oven! Bake your breaded tomatoes at 375 degrees for about 15 minutes. Flip and bake about additional 15 minutes.
  3. Spraying the tomatoes after they have been breaded, right before placing in the air fryer, will help get them extra crispy. BUT if you do not have cooking spray, you can actually skip this step. They will still get crispy!
  4. The herbed mayo can be made in advance and stored in the fridge until ready to make the sandwich. This will save you a little bit of time! You also will likely have some left-over mayo to use to make this sandwich again or to use for another recipe!

Air Fryer Tomato and Mozzarella Sandwich

A summer forward sandwich with a crispy air fryer tomato, fresh mozzarella, and herbed mayo sauce.

Ingredients
  

Sandwich

  • 2 slices of bread
  • 2 slices of Air Fryer tomato recipe below
  • Herbed mayo recipe below
  • Fresh Mozzarella

Herbed Mayo

  • 1/2 C. Mayo
  • 1/4 C. Fresh Basil
  • 1/4 C. Fresh Parsley
  • 1 Garlic Clove
  • Squeeze of lemon juice from 1/4 of a lemon

Air Fryer Tomato

  • 1 Beefsteak or other large tomato
  • 1 egg
  • 3/4 C. Panko
  • 1/4 C. Flour
  • 1/2 tsp. Paprika
  • 1/2 tsp. Italian seasoning
  • Salt and pepper
  • Cooking spray

Instructions
 

  • To make the herbed mayo, combine the mayo, basil, parsley, garlic and lemon juice into a food processor. Blend until smooth. Set aside or refrigerate until ready to build the sandwich.
  • Slice the tomato into 1/4 inch pieces. Preheat air fryer to 390 degrees. Place the flour into a bowl. Beat the egg in a separate bowl. In a third bowl, combine panko, paprika, Italian seasoning and salt and pepper to taste.
  • Dip tomato slices one at a time into flour, egg, then breadcrumb mixture, making each piece is getting fully covered.
  • Place in air fryer and spray with cooking oil. Air fry for 8-10 minutes, flipping halfway.
  • To build the sandwich, spread a generous layer of the herbed mayo on both pieces of bread. Lay down the air fryer tomato slices, and fresh mozzarella slices onto one of the slices of bread. Top second bread slice and enjoy!
