To make the herbed mayo, combine the mayo, basil, parsley, garlic and lemon juice into a food processor. Blend until smooth. Set aside or refrigerate until ready to build the sandwich.
Slice the tomato into 1/4 inch pieces. Preheat air fryer to 390 degrees. Place the flour into a bowl. Beat the egg in a separate bowl. In a third bowl, combine panko, paprika, Italian seasoning and salt and pepper to taste.
Dip tomato slices one at a time into flour, egg, then breadcrumb mixture, making each piece is getting fully covered.
Place in air fryer and spray with cooking oil. Air fry for 8-10 minutes, flipping halfway.
To build the sandwich, spread a generous layer of the herbed mayo on both pieces of bread. Lay down the air fryer tomato slices, and fresh mozzarella slices onto one of the slices of bread. Top second bread slice and enjoy!
