I have been making a lot of sweet apple treats this fall, like my cinnamon apple coffee cake (so dang GOOD). But I realized that before apple season wraps up, I needed a more savory apple recipe. And this creamy brie and apple grilled cheese might be the perfect way to end apple season.

If you love brie cheese, you will absolutely love this grilled cheese sandwich! The creamy brei cheese and crispy apples are really the star of this super easy sandwich. The flavor combo with the savory and buttery brie pairs so perfectly with the sweet apple. These flavors are enhanced with the honey mustard sauce that adds moisture and rounds out this cozy grilled cheese. This grown-up fall forward grilled cheese is one that you will want to add to your menu to try ASAP.

Ingredients you need to make this brie and apple grilled cheese with honey mustard sauce

Brie Cheese: Adds a creamy and buttery layer to this grilled cheese. It gets a little melty and gooey after warming up.

Apples: The crunchy, tart and sweet apples are the perfect match to the brie cheese! Adds texture and flavor.

Arugula: The slightly spicy arugula brings more texture and flavor. You can use baby or micro arugula in this grilled cheese sandwich.

Bread: I highly recommend using high quality sourdough bread if possible! A nice, thick piece of bread will also help hold all the goodness of this adult grilled cheese together better!

Butter: Helps the bread get perfectly toasty. You can replace the butter with some mayo if desired.

Honey Dijion Mustard Sauce: This homemade honey Dijon sauce is made up of hot honey (or regular), olive oil, Dijion mustard, apple cider vinegar, mayo, salt and pepper.

What kind of apples to use when making this brie and apple grilled cheese

I personally love Honey Crisp apple in this grilled cheese! The sweet and tartness is balanced out by the creamy brie that makes it top pick for apple in this recipe. But here are a few other apple verities that work well.

Pink Lady: This apple has a crisp texture, and falls on the tarter side but still has a nice touch of sweetness.

Gala: This apple is on the sweeter side and has a crisp texture.

Golden Delicious: This tart and lightly sweet apple has a mild flavor.

Ambrosia: This juicy apple is sweet and crisp.

Tips and tricks when making this grilled cheese

  1. Cook the grilled cheese on medium-low heat to allow the brie cheese to get a little melty and the bread to get a nice golden color. Too high of heat and the bread might burn before the cheese has a chance to melt. You can adjust the heat as needed if you find cheese is melting too fast or too slow.
  2. Use thick pieces of bread! This is a hearty and stuffed grilled cheese that needs some good bread to hold it all together.
  3. You will have left over Honey Dijion mustard sauce. Save it to use on other sandwiches, or with chicken. My kids love to dip chicken nuggets into it!
  4. Add the arugula after the grilled cheese has come off the heat. This will prevent the arugula from getting welted and soggy.
  5. Enjoy immediately! This easy sandwich is best eaten right away.

Brie and Apple Grilled Cheese with Honey Mustard Sauce

A grown-up grilled cheese with creamy brie, sweet apple, arugula, and a homemade honey mustard sauce. Perfect quick and delicious lunch.

Ingredients
  

  • 2 slices of Sourdough Bread
  • 1 Apple sliced
  • Brie Cheese sliced
  • Handful of Arugula
  • 1/2 Tbsp. Butter

Honey Mustard Sauce (recipe below)

  • Honey Mustard sauce:
  • 1 Tbsp. Hot honey or regular honey
  • 2 tsp. Olive oil
  • 1 Tbsp. Dijon Mustard
  • 1 tsp. Apple cider vinegar
  • 1/2 C. Mayo
  • Salt and pepper to taste

Instructions
 

  • o make the honey mustard sauce, combine all ingredients together in a bowl. Stir until fully combined.
  • To make the Brie and apple grilled cheese sandwich, spread the butter onto one side of each slice of bread. Flip the bread over, and on the unbuttered side, spread a generous layer of the honey mustard sauce on both pieces of bread. There will be left-over honey mustard sauce. Add a layer of sliced Brie cheese, and sliced apples on one slice of the bread over the honey mustard sauce. Place the bread slice on top, with the buttered side facing out.
  • Place the grilled cheese in a skillet over medium-low heat. Cover and let the bread get golden brown. Carefully flip and brown the other side of the sandwich.
  • Remove the sandwich from the skillet. Remove one of the pieces of bread and add a layer of arugula. Place the bread back on, and cut the sandwich in half if needed. Enjoy immediately!
