I have a theory that every salad can be turned into a toast. And not just a plain toast, but a next level breakfast or brunch toast that will blow you away. So, when I was thinking about new recipes, I had a thought about Caesar salad and if it would brunch. And it turns out, it absolutely can be reinvented into a brunch recipe!

I wanted to add a touch more of flavor to this toast recipe by adding a layer of roasted garlic and frying the egg with parmesan cheese. These two extra steps add on some time, but I highly recommend NOT skipping them! The roasted garlic and parmesan fried egg are what make this toast so special!

How to roast garlic

Roasting garlic is so simple! It takes a little extra time, but the majority of the time is spent roasting in the oven. Here is how to roast the garlic for this toast recipe:

  1. Preheat the oven to 400 degrees F. Take a whole garlic and slice off roughly 1/4 inch the top of the head. Place the garlic cut side up in foil. Drizzle over a little oil and season with a little salt. Wrap the garlic in the foil.
  2. Roast in the oven for 35-45 minutes or until the garlic is soft and lightly browned. Remove from the oven and let cool enough to handle.
  3. And that’s it! Simple but packs so much flavor!

What you will need to make this Caesar Salad Toast

Sourdough Bread: Sourdough bread works the best for this recipe. You could swap for another bread, such as French or ciabatta if you wish.

Romaine Lettuce: You will need a few handfuls of washed and cut romaine lettuce. The amount you use depends on how much lettuce you want to have on the toast.

Parmesan Cheese: The parmesan cheese gets mixed in with the ramaine lettuce, in the fried egg and then sprinkled on top. No shortage of cheese in this toast!

Caesar Dressing: Use your favorite store-bought dressing or make your own to toss with the lettuce.

Garlic: You will need a whole head of garlic to roast.

Eggs: One to two eggs per toast slice will be needed.

Olive or Avocado Oil: A little oil to drizzle over the garlic for roasting and a touch in the skillet to fry the eggs to prevent sticking.

Salt and Pepper: Add salt and pepper to taste to enhance the flavors.

Tips and tricks

  1. Make sure to get the bread nice and toasty! It needs to be able to hold up to all the goodness that goes on top!
  2. You can make the roasted garlic in advance to save time. Just follow the instructions for the roasted garlic. Let it cool, then remove the garlic cloves and store in olive oil in an airtight container in the refrigerator for a few days. This way, you can whip this Caesar toast up in less than 10 minutes!
  3. Try to use freshly grated parmesan cheese, if possible, instead of pre-shredded cheese. Pre-shredded cheese often has an anti-caking agent on it that can interfere with the melting process.
  4. Start with medium heat while cooking the eggs over the parmesan cheese, but watch for it browning too quickly. Adjust to a medium-low heat if you feel the parmesan cheese is getting too brown before the eggs are done cooking.
  5. Enjoy this toast immediately after assembly. It is not one that can sit around or be made in advance.

Caesar Salad Toast with Roasted Garlic and Parmesan Fried Egg

A twist on the classic salad! This brunch or breakfast toast takes all the ingredients typically used to make a Caesar salad and makes it into a toast. Plus, it has a crispy fried parmesan egg on top, adding protein and flavor.
Prep: 10 minutes
Cook: 35 minutes

Ingredients
 

  • Romaine Lettuce (in small pieces)
  • Caesar dressing (to taste)
  • Parmesan cheese (shaved and to taste)
  • 1 slice Sourdough bread (toasted)
  • 1 whole garlic
  • 1-2 eggs
  • 1/4-1/2 C. Finely grated Parmesan cheese (1/2 cup for 2 eggs)
  • drizzle of olive oil or avocado oil

Instructions
 

  • To roast the garlic, preheat oven to 400 degrees. Slice off about 1/4 inch of the top of bulb. Place onto a small sheet of foil. Drizzle a little oil and season with a sprinkle of salt. Wrap in the foil and roast in the oven for 35-45 minutes. Remove from oven and let cool enough to handle.
  • When ready to assemble the toast, toss the lettuce, shaved Parmesan cheese, and Caesar dressing together. Set aside.
  • To make the Parmesan fried eggs, lightly grease a medium skillet and turn on heat to medium. Once hot, add 1/4 cup grated Parmesan cheese to the skillet, creating a circle slightly larger than an egg. Add the egg to center of the Parmesan cheese. Repeat for second egg if needed. Cover and cook until the egg(s) have reached desired temperature. If the Parmesan cheese starts to get too brown, reduce heat to medium-low.
  • Squeeze out the roasted garlic cloves and spread onto the toast. You can add only half of the garlic head to the toast or the whole roasted garlic, depending on how much garlic flavor you want. Top with a layer of the romaine lettuce tossed with Caesar dressing. Add egg(s) over the toast. Season with salt and pepper to taste. Sprinkle on grated Parmesan cheese and enjoy immediately.
