The creamy burrata right on top of the pizza adds another layer that is so irresistible!
If you are unfamiliar with delicata squash, it is a fall and winter squash that is sweet, a little nutty and has a tender rind. I love cooking with this squash because you do not have to peel it. The skin on the squash is more tender compared to butternut squash, so you can just wash it, and slice it up! Easy and saves so much time. And added bonus, the delicata squash is really delicious! For this fall harvest pizza, it is roasted in the oven with seasonings like salt, cayenne pepper, cumin and brown sugar. The end result is a flavor packed roasted squash that pairs beautifully in this pizza.
I have also made this pizza in the cast-iron skillet. You do not need any fancy pizza stones or tools to get this pizza baked up! Just an oven and large cast-iron skillet! It is a really simple and still delicious way to make a pizza at home. This method of making pizza in one of my favorites because the crust still gets crunchy on the bottom!

Unique: This pizza is not your typical pizza! It has a unique flavor combination that I have never seen on any pizza menu. And it utilizes fresh and seasonal ingredients which is always a win! It is a fun way to switch up your pizza night at home to something that stands out and is so GOOD!
Easy: I love that you have a tasty pizza made at home and do need a pizza oven or pizza stone. You of course can still make this pizza with those tools if you have them. But if you do not and want a pizza night at home, the cast iron method is so easy! And the pizza recipe itself is simple! The hardest part is waiting for the delicata squash to roast in the oven!
Delicious: Seriously, this fall harvest pizza is so dang delicious! The flavors come together and complement each other in a way that will make you wonder where this pizza has been all your life. I have to make this pizza every year as soon as I see the grocery stores have delicata squash in stock!

Tips and tricks to making this cast-iron skillet fall pizza
- You can use your favorite pizza dough or use a store bough pizza dough!
- Do not forget to grease the cast iron skillet before adding the pizza dough! You can even add cornmeal to help prevent the dough from sticking if you would like. But I have done just the oil before with no problems!
- Placing the cast-iron skillet onto a stove burner before placing it the oven to bake will help the pizza to achieve a crispy bottom. Just watch it carefully so you do not burn the pizza! It should just be starting to turn golden brown when done and ready to bake! Try not to skip this step but if you forget, the pizza will still turn out good!
- Gently spread out the roasted garlic onto the pizza dough so you do not end up with a one big bite of garlic. And let the roasted garlic cool a little bit before squeezing out the garlic cloves so you don’t burn yourself.
- Shred your own mozzarella cheese instead of using the pre-shredded bagged cheese. I recommended this because the pre-shredded cheese have an additive on it to prevent it from caking together. But this also prevents the cheese from melting perfectly! You might find the cheese barely melting at all if you use the pre-shredded cheese.
- Enjoy this pizza immediately after adding the burrata cheese! If you do not plan on eating all of it, just place the burrata and arugula on what you plan to eat.

Ingredient Substitutions and variations
There are limited ingredient substitutions for this recipe but there are a few. Try to make as little as possible for the recipe for best results.
Burrata Cheese: I love the creaminess that the burrata cheese brings to this fall harvest pizza! But I know that burrata can be expensive and hard to find sometimes. So as a replacement if needed, you can use ricotta cheese. Or you can skip the burrata all together if you wish!
Onions: I have used yellow onion, sweet onion and red onion in this recipe. And they all taste amazing! Go with whenever you have on hand and love.
Delicata squash: This squash is really the star of this pizza. But if you cannot find it, you could replace it with acorn squash. If you do decide to make this change, I would suggest peeling the acorn squash. The skin is edible, but it is not as tender as the delicata squash. But the choice is up to you as the skin is safe to eat!

Cast-Iron Fall Harvest Pizza with Delicata Squash and Burrata
Ingredients
- 10 ounces of your favorite pizza dough
- 2 C. Mozzarella cheese shredded
- 1 Delicata squash
- 1/4 Onions sliced
- 1 Burrata cheese ball
- 2 Tbsp. Olive oil divided
- Arugula in dressing recipe below
- 1 Roasted garlic
Roasted delicata squash
- 1 tsp. Brown sugar
- 1/4 tsp. Cayenne
- 1 tsp. Cumin
- Salt and pepper
- 2 Tbsp. Avocado oil
Dressing for arugula:
- 1 C. Arugula
- 2 tsp. Olive oil
- 2 tsp. Apple cider vinegar
- 1/4 tsp. Dijon mustard
- 1/4 tsp. Honey
- Salt and pepper
Instructions
- Preheat oven to 400 degrees F.
- Cut squash lengthwise, and clean out the seeds. Slice into 1/4 inch pieces. Place onto a cookie sheet with parchment paper. Drizzle with oil, brown sugar, cayenne, cumin and salt and pepper. Cut the end off of a whole garlic head, and drizzle with oil. Wrap in foil, and place onto the cookie sheet with the squash. Roast in the oven at 400 degrees for 30-35 minutes or until the squash is golden brown. Turn oven up 500 degrees F.
- Drizzle about 1 tablespoon of olive oil into a cast iron skillet. Shape your pizza dough to fit into the cast iron skillet. Place your pizza dough in the skillet and shape more if needed. Add remaining 1 tablespoon olive oil onto the dough and spread evenly. Squeeze the roasted garlic out onto the pizza dough, and spread out. Sprinkle the mozzarella cheese. Top with the roasted delicate squash, and onions. Turn on heat over a burner to medium-high heat. Cook the pizza in the cast iron over the burner until the bottom just starts to brown, about 5 minutes. Turn off heat and place in the oven for 10-12 more minutes, or until the cheese and melted and started to brown.
- Remove from oven. In a small bowl, mix up the dressing for the arugula by adding all the ingredients together. Toss in arugula. Place Burrata in the middle of the pizza. Top with the dressed arugula. Enjoy!
