Cast-Iron Fall Harvest Pizza with Delicata Squash and Burrata

A fall forward pizza made it in the cast-iron skillet. This flavorful pizza has roasted delicata squash, garlic, onions, mozzarella, arugula, and burrata cheese.

Cook: 45 minutes

Ingredients
 

  • 10 ounces of your favorite pizza dough
  • 2 C. Mozzarella cheese (shredded)
  • 1 Delicata squash
  • 1/4 Onions (sliced)
  • 1 Burrata cheese ball
  • 2 Tbsp. Olive oil (divided)
  • Arugula in dressing (recipe below)
  • 1 Roasted garlic

Roasted delicata squash

  • 1 tsp. Brown sugar
  • 1/4 tsp. Cayenne
  • 1 tsp. Cumin
  • Salt and pepper
  • 2 Tbsp. Avocado oil

Dressing for arugula:

  • 1 C. Arugula
  • 2 tsp. Olive oil
  • 2 tsp. Apple cider vinegar
  • 1/4 tsp. Dijon mustard
  • 1/4 tsp. Honey
  • Salt and pepper

Instructions
 

  • Preheat oven to 400 degrees F.
  • Cut squash lengthwise, and clean out the seeds. Slice into 1/4 inch pieces. Place onto a cookie sheet with parchment paper. Drizzle with oil, brown sugar, cayenne, cumin and salt and pepper. Cut the end off of a whole garlic head, and drizzle with oil. Wrap in foil, and place onto the cookie sheet with the squash. Roast in the oven at 400 degrees for 30-35 minutes or until the squash is golden brown. Turn oven up 500 degrees F.
  • Drizzle about 1 tablespoon of olive oil into a cast iron skillet. Shape your pizza dough to fit into the cast iron skillet. Place your pizza dough in the skillet and shape more if needed. Add remaining 1 tablespoon olive oil onto the dough and spread evenly. Squeeze the roasted garlic out onto the pizza dough, and spread out. Sprinkle the mozzarella cheese. Top with the roasted delicate squash, and onions. Turn on heat over a burner to medium-high heat. Cook the pizza in the cast iron over the burner until the bottom just starts to brown, about 5 minutes. Turn off heat and place in the oven for 10-12 more minutes, or until the cheese and melted and started to brown.
  • Remove from oven. In a small bowl, mix up the dressing for the arugula by adding all the ingredients together. Toss in arugula. Place Burrata in the middle of the pizza. Top with the dressed arugula. Enjoy!
