Cottage Cheese: This is what gives the egg bites their creamy, almost custardy texture. Use any percent cottage cheese you have on hand. If you need a dairy-free option, a plain dairy-free yogurt can work in a pinch, though the texture will be slightly different.

Spinach: Fresh spinach blends right into the egg mixture and you truly cannot taste it. It adds color, nutrients, and moisture without being overwhelming. You can swap for kale or another leafy green if needed.

Feta: Crumbled feta adds a salty, savory flavor throughout each bite. You can use a reduced-fat feta or swap for goat cheese if you prefer a creamier, milder flavor.

How to Make Cottage Cheese Egg Bites: Step-by-Step Instructions

  1. Preheat the oven to 350 degrees F. Grease 9 muffin tins very well with oil or cooking spray. Set aside.
  2. Add the oil to a skillet over medium heat. Add the diced onion and cook until tender, about 5 minutes. Remove from heat and stir in the chopped spinach.
  3. Add the eggs, cottage cheese, milk, salt, and pepper to a blender. Blend until smooth and fully combined. Stir in the chopped spinach.
  4. Divide the onion and spinach mixture evenly between 9 greased muffin tins. Sprinkle the crumbled feta over the onion and spinach in each tin.
  5. Pour the blended egg mixture evenly over the onion and feta. It is OK to fill the muffin tin almost to the top.
  6. Sprinkle the grated Parmesan cheese over the top of each egg bite.
  7. Bake for 15-20 minutes or until the eggs are fully set and no longer jiggly in the center.
  8. Let cool for a few minutes before removing from the tins. Run a butter knife around the edges if needed to release them. Enjoy!

Greasing the muffin tins really well is the most important step here. Egg bites have a tendency to stick, so do not skip this. I like to use avocado oil spray and coat every part of the tin generously. Silicone muffin tins also work great and make removal a lot easier if you have one on hand.

Can I freeze cottage cheese egg bites?
