Cozy Chicken Noodle Soup Recipe with Turmeric

This cozy chicken noodle soup recipe with turmeric is so easy to make and is packed with flavor. To make this the easiest soup, it can all be done in the Instant pot. Minimal dishes to wash so you can spend more time resting, less time washing up from dinner. The chicken comes out so tender, and the flavors of the soup develop great with the pressure cooker. In fact, my sick toddler, who is usually a pretty picky eater, LOVED this soup! As any parent knows, that is a huge win!

As much as I love summer, fall is always a favorite season of mine. The change in weather is welcomed after the hot summer days. And it is hard to deny that fall offers some of the best flavors! In fact, some of the ultimate comfort foods are found in the fall and winter months. But one thing I always dread about the fall…all the germs my kids pick up at school. From fall to spring, we are in a never-ending cycle of a runny nose and cough.

This classic soup recipe is particularly a family favorite when viruses hit our house. There is just something about a warm bowl of soup to help you feel better. It is like a big, cozy hug when all else is well…just miserable. I added the turmeric to give this chicken noodle soup an extra boost of healing for those times when you or your family is under the weather. The turmeric gives the soup only a slightly earthy taste but is mild and blends in beautifully with all the other ingredients.

Immune boosting ingredients

I made this soup recently when the ENTIRE family was wiped out from the worst cold. It can be so challenging to get healthy and nutritious food in the not only myself, but my young kids as well when we are all feeling so horrible. But this soup is always a hit with the family. Here are the ingredients used to help boost that immune system!

Turmeric: The turmeric in this chicken noodle soup really gives it that extra healing properties. It is rich in phytonutrients which makes high in antioxidants. Turmeric is known to reduce inflammation and boost the immune system! I use turmeric powder in this recipe, but you can replace it with fresh. Just be sure to grate or finely mince it into the soup.

Garlic: Garlic brings not only flavor to this cozy soup, but also some healing powers. Garlic is widely known for its antiviral properties, as well as being an antioxidant.

Chicken Broth or bone broth: You can use chicken broth or chicken bone broth in this recipe to add liquid to help keep you hydrated. The chicken stock also contains nutrients that your body needs when sick! The warmth of the broth is also soothing on a sore throat and easy eat even when you might have little or no appetite.

Vegetables: The celery, carrot and onion provides soft and flavorful vegetables to this soup recipe. They are easy to eat and also give flavor to the soup while it cooks! It is great way to get your veggies in, especially when you do not feel your best.

Tips and tricks when making this cozy chicken noodle soup recipe with turmeric

Before you pull out the Instant Pot, here are some tips and tips for success when making this soup!

  1. If you do not have an Instant Pot or wish to use a slow cooker instead, you can cook it on low for about 7-8 hours or high for about 4 hours. It is done when the chicken is cooked through and tender.
  2. I use boneless and chicken thighs in this recipe because it comes out incredibly tender, but you can use chicken breast in its place if you want.
  3. Do not be alarmed by the color the turmeric turns the chicken after cooking! The chicken will have a yellow color to it from the intense color in the turmeric! Normal and part of cooking with turmeric.
  4. If you want to use fresh turmeric instead of powder, just take a small knob and grate it or finely mince it into the soup before pressure cooking.
  5. You can replace the fresh thyme in the chicken noodle soup by adding about 1/2 tsp. of dried thyme before pressure cooking. When using fresh thyme, I like to add it after pressure cooking when the noodles are added.
  6. if you want a more brothy soup, add one additional cup of chicken broth/stock to the soup before pressure cooking.

Cozy Chicken Noodle Soup Recipe with Turmeric

A healthy, easy and flavorful chicken noodle soup with turmeric. It is all cooked in the Instant Pot and is perfect for rainy or sick days. A big hug in a bowl!

Ingredients
  

  • 1-1.5 lbs. Chicken thighs skinless and boneless
  • 5 C. Chicken broth
  • 5 oz. Egg noodles
  • 3 carrots diced
  • 2 celery sticks chopped
  • 1 Onion diced
  • 3 Garlic cloves minced
  • 1 tsp. Fresh Thyme or 1/2 tsp. Dried thyme
  • 1 tsp. Dried Oregano
  • Salt to taste
  • 2 Tbsp. Avocado Oil
  • 2 Bay leaves
  • 1/2 tsp. Paprika
  • 1/2 tsp. Turmeric powder

Instructions
 

  • Turn the Instant Pot onto sauté and add the avocado oil.
  • Place the diced carrots, onions and celery into the hot pot. Saute for 3-5 minutes or until tender. Add the minced garlic and cook one additional minutes. Turn off sauté.
  • Add the chicken broth, dried thyme (and dried oregano if not using fresh), paprika, turmeric, and bay leaves. Stir. Place chicken thighs into the instant pot. Place on the lid to the pressure cooker and lock into place. Pressure cook 17-18 minutes on high pressure, or until chicken is cooked and tender.
  • Quick release the pressure and remove lid when all the pressure is out. Take out the chicken, and turn the pressure cooker onto sauté. Add the pasta and fresh thyme and cook until the pasta is done, about 6-10 minutes depending on your pasta. Turn off the Instant Pot.
  • Shred the chicken and add back into the instant pot. Add salt to taste. Remove from Instant Pot into individual serving bowls and enjoy!

Notes

Nutrition facts are an estimate. The soup can be divided into 4 large servings or 6 smaller servings. 
If you are making the soup in the slow cooker that does not have a sauté setting, use a skillet to sauté the vegetables. You will need to reduce the chicken broth to 4 cups and cook the pasta in a separate pan with boiling water.
