Cozy Chicken Noodle Soup Recipe with Turmeric
A healthy, easy and flavorful chicken noodle soup with turmeric. It is all cooked in the Instant Pot and is perfect for rainy or sick days. A big hug in a bowl!

- 1-1.5 lbs. Chicken thighs skinless and boneless
- 5 C. Chicken broth
- 5 oz. Egg noodles
- 3 carrots diced
- 2 celery sticks chopped
- 1 Onion diced
- 3 Garlic cloves minced
- 1 tsp. Fresh Thyme or 1/2 tsp. Dried thyme
- 1 tsp. Dried Oregano
- Salt to taste
- 2 Tbsp. Avocado Oil
- 2 Bay leaves
- 1/2 tsp. Paprika
- 1/2 tsp. Turmeric powder
Turn the Instant Pot onto sauté and add the avocado oil.
Place the diced carrots, onions and celery into the hot pot. Saute for 3-5 minutes or until tender. Add the minced garlic and cook one additional minutes. Turn off sauté.
Add the chicken broth, dried thyme (and dried oregano if not using fresh), paprika, turmeric, and bay leaves. Stir. Place chicken thighs into the instant pot. Place on the lid to the pressure cooker and lock into place. Pressure cook 17-18 minutes on high pressure, or until chicken is cooked and tender.
Quick release the pressure and remove lid when all the pressure is out. Take out the chicken, and turn the pressure cooker onto sauté. Add the pasta and fresh thyme and cook until the pasta is done, about 6-10 minutes depending on your pasta. Turn off the Instant Pot.
Shred the chicken and add back into the instant pot. Add salt to taste. Remove from Instant Pot into individual serving bowls and enjoy!

If you are making the soup in the slow cooker that does not have a sauté setting, use a skillet to sauté the vegetables. You will need to reduce the chicken broth to 4 cups and cook the pasta in a separate pan with boiling water.
