Creamy Orzo with Tomatoes and Burrata

Imagine a velvety orzo dish filled with fresh tomatoes, toasted pine nuts, aromatic basil and topped with creamy burrata cheese. Are you hungry yet? Because I am thinking of this creamy orzo with tomatoes and burrata dish. And to top it off, this easy side dish (or lunch) can be made in about 20 minutes and will elevate any meal.

If you want to make this orzo pasta a full meal, add some sliced chicken right on top after plating. It will pair perfectly with all the flavors in the dish. Or you can enjoy it on its own! We love this dish as a tasty lunch just as it is!

Helpful Hints when making this orzo dish

Before you get to creating this recipe in your own kitchen, here are some help tips!

  1. When making the orzo, leave the burner on high, uncovered, and stir frequently. Do not be alarmed by the amount of liquid at first, it will get absorbed by the orzo. You will know when the orzo is done when it is tender, and the liquid is almost all the way gone. It should have a creamy consistency.
  2. I know burrata can sometimes be hard to find. It pairs beautifully with the dish, but if you cannot find it, replace it with fresh mozzarella.
  3. You can change out the chicken broth for vegetable broth. Do not use water as the orzo will not turn out as flavorful.
  4. Be sure to add the lemon juice AFTER the orzo is done cooking. If you add it prior to this, it can taste bitter. You can taste and add more lemon if desired.

Creamy Orzo with Burrata and Tomatoes

A creamy orzo pasta with toasted pine nuts, fresh tomatoes, basil, and topped with burrata cheese.
Prep Time 5 minutes
Cook Time 15 minutes
Course Side Dish

Ingredients
  

  • 2 tsp. Olive oil
  • 3 garlic cloves
  • 1 C. Orzo
  • 2 3/4 C. Chicken broth
  • 1 Burrata ball
  • Handful of fresh Basil leaves
  • 1/4 C. Tomatoes sliced
  • 1/2 of a lemon juiced
  • 1/4 C. Toasted pine nuts
  • salt and pepper to taste

Instructions
 

  • Heat the olive oil in a large skillet over medium-low heat. Add the garlic cloves and orzo. Sauté for about 2 minutes. Pour in chicken broth and bring to a boil. Cook the orzo until majority of the liquid is absorbed, stirring often, for about 15 minutes.
  • Once the orzo is cooked, stir in the lemon juice, tomatoes, fresh basil, toasted pine nuts., salt and pepper. Plate and top with Burrata cheese and additional basil leaves if desired. Enjoy!
