Creamy Orzo with Burrata and Tomatoes

A creamy orzo pasta with toasted pine nuts, fresh tomatoes, basil, and topped with burrata cheese.

- 2 tsp. Olive oil
- 3 garlic cloves
- 1 C. Orzo
- 2 3/4 C. Chicken broth
- 1 Burrata ball
- Handful of fresh Basil leaves
- 1/4 C. Tomatoes sliced
- 1/2 of a lemon juiced
- 1/4 C. Toasted pine nuts
- salt and pepper to taste
Heat the olive oil in a large skillet over medium-low heat. Add the garlic cloves and orzo. Sauté for about 2 minutes. Pour in chicken broth and bring to a boil. Cook the orzo until majority of the liquid is absorbed, stirring often, for about 15 minutes.
Once the orzo is cooked, stir in the lemon juice, tomatoes, fresh basil, toasted pine nuts., salt and pepper. Plate and top with Burrata cheese and additional basil leaves if desired. Enjoy!
