Gooey Sweet Potato Brownies

Okay, I’ll be the first to admit that I’m hesitant about the healthy recipes out there claiming to be just as good as the real thing. I mean, I’m sure we all have been fooled before by the internet with a dessert that looks too good to be real…and ends up being an epic fail. But let me assure you, that is not the case with these gooey sweet potato brownies. I promise, you will have no regrets making this healthier version.

So what makes these brownies so special? They are gluten free and refined sugar free (minus the chocolate chips). And although they are not exactly the same as the real deal, they are pretty dang close! In fact, my kids can’t tell the difference and devour this healthier version.

These brownies can be made in one bowl or in the blender, making for an easy clean up!

Now let’s talk about the texture of these sweet potato brownies! This is really what makes these brownies stand out. They are gooey and soft which is what makes any brownie dreamy.

Before you get started on making these gooey sweet potato brownies, here some helpful tips!

  1. In the ingredients, it says to use one medium sweet potato. I say this instead of giving exact measurements because it is more practical to just use a whole potato without waste. There can be some variation in how these brownies turn out depending on the size of the potato you use. Try to avoid using a large sweet potato as this will make these TOO gooey.
  2. There are two ways you can mix the batter. In a bowl with an electric mixer or using a blender. I personally love the blender method but because the batter is pretty thick, you might have to give it stir between blending depending on the strength of your blending. Pick whatever method suits you best!
  3. These bad boys are refined sugar free except for chocolate chips. You can skip the chocolate chips if you wish to make this fully refined sugar free, but I personally feel it gives the brownies the perfect touch of sweetness.
  4. Just as with all baking recipes, there a lot of factors that can affect the bake time. Start on the low end and check the brownies. When done, the center should feel firm to the touch but still be a little gooey.

Gooey Sweet Potato Brownies

A healthier brownie made with sweet potatoes.

Ingredients
  

  • 1 medium Sweet potato cooked and peeled
  • 1/2 C. Old fashioned Rolled oats
  • 1/4 C. Apple sauce
  • 1 egg
  • 1/3 C. Maple syrup
  • 1/3 C. Cocoa powder
  • 1/2 tsp. Salt
  • 1 tsp. Vanilla extract
  • 1/3 C. Almond butter or peanut butter
  • 1 tsp. Baking soda
  • 1/2 C. Chocolate chips

Instructions
 

  • Add the rolled oats to a blender or food processor and blend until a oat flour. Combine all ingredients expect for the chocolate chips and beat together until smooth. You can also use a blender! After the battle is smooth, fold in the chocolate chips. Pour the batter into a greased 8×8 baking dish. Bake at 350 for 25-28 minutes until set. The brownies should feel firm to the touch but should be a little gooey still. Let cool before enjoying!
