Gooey Sweet Potato Brownies

A healthier brownie made with sweet potatoes.

Ingredients
 

  • 1 medium Sweet potato (cooked and peeled)
  • 1/2 C. Old fashioned Rolled oats
  • 1/4 C. Apple sauce
  • 1 egg
  • 1/3 C. Maple syrup
  • 1/3 C. Cocoa powder
  • 1/2 tsp. Salt
  • 1 tsp. Vanilla extract
  • 1/3 C. Almond butter or peanut butter
  • 1 tsp. Baking soda
  • 1/2 C. Chocolate chips

Instructions
 

  • Preheat oven to 350 degrees. F
  • Add the rolled oats to a blender or food processor and blend until a oat flour. Combine all ingredients expect for the chocolate chips and blend together until smooth. You can also use a large mixing bowl and hand mixer in place of the blender.
  • Fold in the chocolate chips to the batter. Pour the batter into a greased 8x8 baking dish. Bake at 350 for 25-28 minutes until set. The brownies should feel firm to the touch but should be a little gooey still. Let cool before enjoying!
