Grilled Zucchini and Burrata Toast

When I started making my own sourdough bread, I became a little bit obsessed with creating new ways to eat it. I thought it was a “phase” but over a year later, and I am still having fun with new toast ideas. And this grilled zucchini and burrata toast is my newest toast masterpiece.

This summer forward toast idea only has 5 ingredients (minus the salt and pepper) and is full of flavor. It has a sourdough base that holds the grilled zucchini, creamy burrata, earthy pistachios, and hot honey.

The combination of all these flavors come together for the perfect bite. And of course the perfect way to enjoy sourdough bread!

Tips for making this grilled zucchini and burrata toast

Before you fire up the grill and get that sourdough bread toasty, here are some tips and tricks.

  1. Make sure to get that sourdough bread nice and toasty! You will want a good base to hold all the goodies on top of this toast. The zucchini and burrata have a decent amount of liquid so you want it more than lightly toasted. Also, this is a great way to use up older bread!
  2. I know that burrata can be expensive and even to hard in some places. You can replace it with fresh mozzarella cheese. You could also use ricotta cheese, but I would make sure to season the ricotta at least with a little salt.
  3. I love the charred flavor you get from grilling the zucchini! BUT if grilling is not an option for you, you can heat some oil a skillet and cook the zucchini there. Just try to get both sides a little browned if cooking in the skillet.
  4. When slicing the zucchini, cut it on a bias. This means you will angle your knife at a 45-degree angle, so your slices are diagonally shaped compared to being straight cut. This will give you larger zucchini slices that will be easier to grill.
  5. One thing I love about toast recipes like this is that it really more of an idea. And by this, I mean you can adjust the ingredients to your liking! Unlike baking, where you need to follow exact measurements, with this toast you can put as little or much of each ingredient as you want! It is customizable to YOU!
  6. Speaking of customizable, this toast idea could easily to be turned into a delicious side dish! Remove the sourdough bread base (or even make croutons!) and toss all the ingredients.

Grilled Zucchini and Burrata Toast

A toasted piece of sourdough breaded loaded with grilled zucchini, burrata, pistachios and hot honey.

Ingredients
  

  • 1 Zucchini
  • 1/2 Tbsp. Avocado oil or other high heat oil
  • 1 ball of Burrata cheese
  • Handful of Pistachio roughly chopped
  • 1 slice Sourdough bread toasted
  • Hot honey to taste
  • Salt and pepper to taste

Instructions
 

  • Cut the zucchini on a bias in 1/4-1/2-inch slices. Drizzle the avocado oil on both sides of the cut zucchini. Season with salt and pepper.
  • Place the zucchini onto the grill. Cook for about 4-5 minutes, or until the zucchini is turning golden brown. Flip and grill additional 3-4 minutes. Remove from the grill.
  • To build the toast, lay the grilled zucchini on a piece of toasted sourdough bread. Break open ball of burrata cheese and spread out over the zucchini. Sprinkle on some pistachios, and drizzle with hot honey. Enjoy immediately!
