Grilled Zucchini and Burrata Toast

A toasted piece of sourdough breaded loaded with grilled zucchini, burrata, pistachios and hot honey.

- 1 Zucchini
- 1/2 Tbsp. Avocado oil or other high heat oil
- 1 ball of Burrata cheese
- Handful of Pistachio roughly chopped
- 1 slice Sourdough bread toasted
- Hot honey to taste
- Salt and pepper to taste
Cut the zucchini on a bias in 1/4-1/2-inch slices. Drizzle the avocado oil on both sides of the cut zucchini. Season with salt and pepper.
Place the zucchini onto the grill. Cook for about 4-5 minutes, or until the zucchini is turning golden brown. Flip and grill additional 3-4 minutes. Remove from the grill.
To build the toast, lay the grilled zucchini on a piece of toasted sourdough bread. Break open ball of burrata cheese and spread out over the zucchini. Sprinkle on some pistachios, and drizzle with hot honey. Enjoy immediately!
