What you will need
Eggs: You will need about four eggs to scramble for this breakfast sandwich.
Cream Cheese: Cream cheese is spread onto the bread to create a creamy layer.
Jalapenos: Two jalapenos work perfectly for a medium sized French baguette of bread. It will give you a single layer of roasted jalapenos. But you can make more or less depending on bread size and personal preference.
Bacon: Gives those jalapeno popper vibes! I like 4 crispy slices of uncured bacon. You can go with your favorite bacon, and add more or less to personalize this spicy breakfast sandwich.
Cheddar Cheese: Cheddar cheese melted over the eggs is just pure perfection!
Bread: Choose a hearty bread such as ciabatta, French or sourdough bread. This is a loaded breakfast sandwich and a good bread is the base that hold all the goodness together.
Milk: A little bit of milk is mixed with the eggs before cooking to help create fluffy eggs.
Chives: Adds a little more flavor to the eggs. You can omit if you wish.
Avocado Oil: A touch of avocado oil is needed to roast the jalapenos. I also like to add a little to my pan that cook the eggs in instead of butter.
Salt and Pepper: Enhances the flavors.

Tips and tricks
- I love the convenience of roasting the jalapeno in the air fryer to save time, but you still roast them in the oven. To do this, preheat the oven to 425 degrees F. Prepare and oil the jalapenos as the recipe follows for the air fryer. Place on a cookie sheet lined with parchment paper and roast for 15-20 minutes or until the jalapenos are soft and starting brown.
- Using gloves while cutting cup the jalapenos will help prevent you from accidently touching your face (or eyes!). If you skip the gloves, just be sure to wash your hands immediately after handling the jalapenos and be cautious not to touch anything prior to washing.
- I usually remove all the seeds and membrane from the jalapeno but feel free to leave some to increase the spicy level if you wish!
- Shred your own cheddar cheese if possible! Pre-shredded cheese might save a few minutes in time but it often times have a anti-caking agent on it that may interfere with the melting of the cheese.

Jalapeno Popper Breakfast Sandwich with Eggs
Ingredients
- 1 baguette of French Bread or ciabatta.
- 4 Eggs
- Cream cheese
- 2 jalapeños
- 1 tsp Avocado oil
- 4 slices of Bacon cooked
- 1/2 C. Cheddar cheese
- 2 Tbsp. Milk
- Salt and pepper to taste
- 1 Tbsp. Chives
Instructions
- To roast the jalapeños, slice the jalapeños in half and remove the seeds and membrane. Coat the jalapeños in the avocado oil. Place in the air fryer at 400 degrees F for 7-10 minutes or until soft and starting to brown. You can also roast the jalapeños in the oven at 425 degrees F for 15-20 minutes.
- While the jalapeños are roasting, prepare the eggs by adding all the eggs into a medium bowl with the milk and chives. Whisk together.
- Add the eggs to a greased skillet over medium heat. Scramble to the eggs until just set.
- Toast the bread by drizzling a little olive oil or avocado oil over the 2 slices of bread. Place in the air fryer for 3-4 minutes at 400 degrees.
- Remove the toasted bread and spread a generous amount of cream cheese onto both sides of the bread. On one side of the bread, add the scrambled eggs. Add salt and pepper to taste. Adds a layer of Lay the roasted jalapeños over the eggs. Top with the shredded cheddar cheese. Place in the air fryer or oven until the cheese has melted.
- Top the eggs with the roasted jalapeños and cooked bacon slices. Top with the other slice of bread and enjoy immediately!
