This peanut butter and chocolate oat bars is one of my favorite recipes that I have created. It is simple, comforting, chewy and oh so delicious. This a treat that you will be making over and over again!
These gooey chocolate bars are similar to cookie but have less sugar than the average cookie recipe. There is only 1/2 cup of honey plus the chocolate chips for added sugar. They are loaded with old fashioned rolled oats, wheat flour, and peanut butter. It ends up being a winning combination!

Tips for making these peanut butter and chocolate oat bars
Before you get out those mixing bowls to make these tasty bars, here are some tips!
- When choosing your oats, make sure you use old fashioned rolled oats. These work the best with this recipe. Quick oats and steel cut oats will affect the texture and moisture in these bars differently.
- I used honey as a sweetener in this recipe, but you can replace it with maple syrup if you wish.
- Watch your bake time closely! As always, there are a lot of factors that can affect how long it takes for these to bake. Start low and check on them. I prefer to take these out of the oven when they are still a little gooey. The edges will be more set, but the center will be softer. If you prefer them less gooey, cook for a few extra minutes. But over baking will result in a dry texture so be careful!
- You can store these at room temperature for up to 3-4 days in an airtight container (if they last even that long!)

Peanut Butter and Chocolate Oat Bars
Ingredients
- 2 eggs
- 3/4 C. Peanut butter
- 1 C. Old Fashioned Rolled Oats
- 1 C. Whole Wheat Flour or all-purpose flour
- 1/3 C. Butter softened
- 1 tsp vanilla extract
- 1/2 C. Honey
- 1/2 tsp. Salt
- 1/2 tsp. Baking soda
- 1/2 C. Chocolate chips
Instructions
- Preheat oven to 350 degrees F.
- In medium mixing bowl, combine the rolled oats, flour, salt, and baking soda. Mix and set aside. In a separate large mixing bowl, add eggs, butter, peanut butter, honey, and vanilla extract. Whisk or use an electric mixer until well combined. Pour in the dry ingredients and mix until just combined. Fold in the chocolate chips.
- Pour the batter into a greased (or lined with parchment paper) 8×8 baking pan. Bake for 20-24 minutes. The edges should be set but the center still look a little underdone. This is perfect! Let cool slightly before enjoying.
