Peanut Butter and Chocolate Oat Bars

A peanut butter and chocolate chip oat bar that taste like a cookie! An easy and delicious dessert for the whole family.

Ingredients
 

  • 2 eggs
  • 3/4 C. Peanut butter
  • 1 C. Old Fashioned Rolled Oats
  • 1 C. Whole Wheat Flour (or all-purpose flour)
  • 1/3 C. Butter (softened)
  • 1 tsp vanilla extract
  • 1/2 C. Honey
  • 1/2 tsp. Salt
  • 1/2 tsp. Baking soda
  • 1/2 C. Chocolate chips

Instructions
 

  • Preheat oven to 350 degrees F.
  • In medium mixing bowl, combine the rolled oats, flour, salt, and baking soda. Mix and set aside. In a separate large mixing bowl, add eggs, butter, peanut butter, honey, and vanilla extract. Whisk or use an electric mixer until well combined. Pour in the dry ingredients and mix until just combined. Fold in the chocolate chips.
  • Pour the batter into a greased (or lined with parchment paper) 8x8 baking pan. Bake for 20-24 minutes. The edges should be set but the center still look a little underdone. This is perfect! Let cool slightly before enjoying.
