Pear and Goat Cheese Toast with Arugula and Pomegranate

A sourdough toast smothered in creamy goat cheese and topped with fresh pears, spicy arugula and sweet pomegranate seeds. This pear and goat cheese toast with arugula and pomegranate is the perfect toast to make as a snack, part of lunch or turned into an easy appetizer.

Toast recipes are still one of my favorite recipes to create! There is so much you can put on a piece of toasty sourdough bread and turn it into a unique and delicious snack or lunch idea. And I realized it had been too long since I had created a toast recipe. In fact, my last toast creation was my zucchini and burrata toast was about 4 months ago! So, it is time for a new fall and winter toast idea! And this pear and goat cheese toast definitely has all those cooler weather vibes.

If you have ever had a pear salad with goat cheese and pomegranates, then you probably know how amazing the flavors work together. In fact, a pear salad was my inspiration for this easy toast idea! Just turned into a handheld toast. Because sourdough bread makes everything BETTER! The arugula is even toasted in a light dressing to pump up the flavor in this savory toast.

Why you will love this pear and goat cheese toast with arugula and pomegranate

Easy to make: This toast is easy to make and will be ready to enjoy in under 10 minutes. No baking or cooking time needed other than toasting the bread.

Versatile: If you want to turn this toast into a salad, go for it! The recipe could easily to turned to a tasty winter salad by adding more dressing and arugula/lettuce and using croutons instead of toast. Or you can make this toast into an appetizer by making this into crostini. This turns toast idea into a bite sized easy appetizer that look beautiful for the holiday season.

Delicious: I cannot emphasis enough how DELICIOUS this combo of flavors is! Each bite is so flavorful, and so good!

Ingredients used to make this toast recipe

Pears: You will need about 1 pear per piece of toast. You can choose any variety of pear you enjoy!

Goat cheese: A plain, unflavored creamy goat cheese is spread onto the toasted sourdough bread. You can add as much or little of the goat cheese as you like!

Arugula: Regular or baby arugula works well in this salad turned into toast idea.

Sourdough bread: A thick slice of toasted sourdough bread to hold all the delicious toppings on this toast!

Pomegranate seeds: The seeds a crunch and pop of color to this savory fruit toast recipe.

Dressing: The arugula is tossed in a homemade dressing made up of Dijon mustard, olive oil, apple cider vinegar, and honey. You can add salt to taste.

Tips and tricks to making this pear and goat cheese toast

  1. Use a high-quality sourdough bread. The bread really makes a difference with this toast! Also, be sure to make sure it is a thick slice and is nicely toasted to hold up the goodness that goes onto this toast.
  2. You can use store bought, ready-to-eat pomegranate seeds to make this toast faster and easier. If you do choose to use a whole pomegranate, cut it open by slicing the off the top “flower” of the pomegranate. Then score the ridges that run down the sides of the pomegranate. Using your hands, pull each section of the pomegranate down.
  3. To make the dressing, you can use a handheld milk frother to combine everything together. This will emulsify the dressing and prevent the oil separating from the vinegar.
  4. Toss the arugula in the dressing right before adding to the toast to prevent it from becoming soggy. You can prep everything, such as making the dressing, in advance, but wait until the last minute to combine everything together.
  5. Enjoy immediately! This pear and goat cheese toast is best if eaten right after assembly.

Pear and Goat Cheese Toast with Arugula and Pomegranate

A sourdough toast topped with creamy goat cheese, fresh pears, arugula in an apple cider vinegar dressing and crunchy pomegranate seeds. Perfect for a snack, part of lunch or turning into an easy appetizer.
Prep Time 10 minutes

Servings 2 pieces of toast

Ingredients
  

  • 2 pears sliced
  • 2 pieces of Sourdough bread toasted
  • 1 C. Arugula
  • Handful of Pomegranate seeds
  • Goat cheese to taste

Dressing:

  • 1/4 tsp. Dijon mustard
  • 2 tsp. Apple cider vinegar
  • 2 tsp. Olive oil
  • Drizzle of honey

Instructions
 

  • In a small bowl, combine the apple cider vinegar, olive oil, honey, and Dijon mustard. Stir until well combined. Toss in the arugula.
  • Spread a generous layer of the goat cheese onto both pieces of toasted sourdough bread. Lay the sliced pear over the goat cheese. Top with the arugula tossed in the dressing. Sprinkle on the pomegranate seeds. Enjoy!
