Plum and Strawberry Crisp

This tart and sweet summer crisp is everything you want from a fruit dessert. It has the juicy filling and perfectly crispy oatmeal topping. A summer treat at its finest. Trust me, you will want to try this plum and strawberry crisp!

If you have never made a plum crisp before, they can be on the tarter side. It can take a little more sugar to even out that tartness. I found that the honey PLUS the strawberries help mellow it down to a perfect flavor combination. It still has all the plum flavors plus some delicious, sweet strawberry flavor.

This plum and strawberry crips is a match made in heaven with vanilla ice cream! But whipped cream makes for a great topping choice as well. And if you looking to turn this summer forward treat into breakfast, it is amazing with plain Greek yogurt! It is sweet breakfast the whole family will love but the Greek yogurt brings in some protein to make it filling start to the day.

Tip for making this plum and strawberry crisp

Before you cut the plums and strawberries, here are some tips and tricks to making this plum and strawberry crisp.

  1. I use fresh strawberries in this crisp and I have never tested the recipe using frozen strawberries. Because the plums are fresh and bake pretty quickly, you should be cautious when using frozen strawberries.
  2. Do not skip the cornstarch on this recipe! It will thicken all that delicious sauce that is created from the fruit. Without the cornstarch, it will be very runny!
  3. Speaking of the sauce, it will thicken a little as the crisp cools. It is still very saucy, but in the best of ways in my opinion!
  4. Old fashioned rolled oats work the best with this topping! The texture might change if you switch it out for steel cut or quick oats, but it will not ruin the crisp if that is all you have on hand!
  5. This plum and strawberry crips should be stored, coved, in the fridge for about 3 days. You can warm it slightly in the microwave when ready to serve if you wish!

Plum and Strawberry Crisp

A sweet and tart plum and strawberry crisp with a rolled oat topping. Perfect with a scoop of ice cream!

Ingredients
  

Filling:

  • 2 C. Strawberries cut into quarters
  • 4 C. Plums pits removed and cut into bite size pieces (2lbs)
  • 1/3 C. Honey
  • 1/2 tsp. Cinnamon
  • 1/2 tsp. Almond extract optional
  • 1 tsp. Vanilla extract
  • 3 Tbsp. Cornstarch

Topping:

  • 1 C. Old fashioned Rolled Oats
  • 1/2 C. Wheat Flour
  • 1/4 C. Butter melted
  • 1/2 tsp. Cinnamon
  • Pinch of Salt
  • 1/3 C. Brown sugar
  • 1/4 tsp. Nutmeg

Add on ideas:

  • Vanilla ice cream
  • Whipped cream
  • Yogurt

Instructions
 

  • Preheat oven to 350 degrees F.
  • Combine the strawberries, plums, honey, cinnamon, cornstarch, almond and vanilla extract together into a 9-inch round pie dish or 9-inch square baking dish. Toss to the ingredients together.
  • To make the topping, add the oats, flour, cinnamon, salt, brown sugar and nutmeg together. Stir. Pour in melted butter, and stir until combined.
  • Evenly sprinkle the topping over the plums and strawberries. Place in the oven and bake for about 35 minutes. The crisp is done with sauce is bubbly. Remove from the oven and let cool slightly before serving. Enjoy!
