Plum and Strawberry Crisp

A sweet and tart plum and strawberry crisp with a rolled oat topping. Perfect with a scoop of ice cream!

Ingredients
 

Filling:

  • 2 C. Strawberries (cut into quarters)
  • 4 C. Plums (pits removed and cut into bite size pieces (2lbs))
  • 1/3 C. Honey
  • 1/2 tsp. Cinnamon
  • 1/2 tsp. Almond extract (optional)
  • 1 tsp. Vanilla extract
  • 3 Tbsp. Cornstarch

Topping:

  • 1 C. Old fashioned Rolled Oats
  • 1/2 C. Wheat Flour
  • 1/4 C. Butter (melted)
  • 1/2 tsp. Cinnamon
  • Pinch of Salt
  • 1/3 C. Brown sugar
  • 1/4 tsp. Nutmeg

Add on ideas:

  • Vanilla ice cream
  • Whipped cream
  • Yogurt

Instructions
 

  • Preheat oven to 350 degrees F.
  • Combine the strawberries, plums, honey, cinnamon, cornstarch, almond and vanilla extract together into a 9-inch round pie dish or 9-inch square baking dish. Toss to the ingredients together.
  • To make the topping, add the oats, flour, cinnamon, salt, brown sugar and nutmeg together. Stir. Pour in melted butter, and stir until combined.
  • Evenly sprinkle the topping over the plums and strawberries. Place in the oven and bake for about 35 minutes. The crisp is done with sauce is bubbly. Remove from the oven and let cool slightly before serving. Enjoy!
