Parmesan Cheese: Grated parmesan cheese creates a crispy and cheesy layer on the fried egg. I recommend using freshly grated parmesan cheese if possible. Pre-grated cheese often has a anti-caking agent on it that can interfere with the melting process.
Oil: A touch of oil is needed for the skillet for frying the egg. You can use avocado or olive oil.
Egg: You will need one or two eggs depending on how many you wish to serve with your avocado toast.
Sriracha: Makes the avocado toast a little spicy. You can leave out if needed.
Avocado: Avocado slices to go onto the toast. You could use guacamole instead of avocado slices.
Everything bagel seasoning: An optional, but delicious add on!

- In a skillet, drizzle a touch of oil over medium heat. Add the grated parmesan cheese, making circle in the shape of the egg. Be sure to create an even and thin layer of cheese. Create a hole in the center of the parmesan cheese the egg to go. Drizzle the sriracha over the parmesan cheese.
- Add the egg to the center of the parmesan cheese. Cover and cook the egg until desired doneness. You can carefully flip the egg if you prefer your fried eggs to be more well done instead of sunny side up.
- While the egg is cooking, add the sliced avocado to your toast. You can use a fork to press it into the bread.
- When the egg is cooked, place over the smashed avocado toast. Sprinkle over everything bagel seasoning, salt and pepper to taste. Enjoy!

Add more or less of the sriracha to adjust the spicy level. And if you really want to add more heat to the toast, you could as a drizzle more of sriracha, hot sauce, or chili oil over the avocado toast right before serving.
