Strawberry Loaf With Strawberry Glaze

Move over banana bread, this strawberry loaf with strawberry glaze is going to convert you! This summer bread will win you over.

But really, this loaf made is made with lots of fresh strawberries and is perfectly tender. I love to even add strawberry “hearts” on top right before baking to really make this bread stand out.

This strawberry loaf is so moist and with the glaze, you do not have to worry about a dry bread. But before you get baking, here are some helpful tips to successfully make this delicious bread.

I totally get that baking can be a bit unpredictable – it’s kind of like a dance with your oven where timing is everything. So, keep an eye on your bread and remember, every oven is a little different. You definitely don’t want to overdo it. Pull it out just when it sets, and you’ll have that perfect loaf you’re aiming for.

Fresh strawberries are the absolute best choice for this recipe – no contest. If you’re stuck with frozen, don’t worry; simply defrost them first and then slice them into perfect bite-sized pieces. Trust me, it’ll turn out great.

Strawberry loaf with strawberry glaze

Ingredients
  

  • 1/3 C. Greek Yogurt
  • 1/2 C. Buttermilk
  • 1 ¾ C. Flour plus 2 Tbsp. To toss strawberries in
  • 1/3 C. Neutral oil I used avocado oil
  • 1/2 tsp. Salt
  • 2 Eggs
  • 1 tsp. Baking soda
  • 1 tsp. Baking powder
  • 3/4 C. Maple syrup
  • 1 tsp. Vanilla extract
  • 1 C. Strawberries Diced-plus more to top bread
  • Strawberry Glaze:
  • 2 Strawberries whole
  • 1 C. Powdered Sugar
  • 1 tsp. Vanilla extract

Instructions
 

  • Preheat oven to 350 degrees. Mix flour, baking soda, baking powder and salt together in a mixing bowl. In a separate bowl, combine the eggs, buttermilk, oil, Greek yogurt, maple syrup and vanilla extract. Mix until fully combined. Stir dry ingredients into wet and mix until just combined. Toss diced strawberries into a 2 Tbsp of flour and coat. Fold in strawberries to the batter. Bake 45-55 minutes or until set and toothpick comes out clean.
  • To make the glaze, add the strawberries, powdered sugar and vanilla extract to a food processor. Blend until smooth. Drizzle glaze onto of cooled strawberry bread. Enjoy!
