Coconut Oil: Melted coconut oil adds moisture to the bread. You can replace with avocado, canola or vegetable oil.

Greek Yogurt: Another layer of moisture for the bread. You can replace with dairy free yogurt or sour cream.

Apple sauce: Adds not only to the apple flavor, but helps reduce the amount of oil is needed in the recipe.

Vanilla Extract: Adds to the flavor of the bread.

Eggs: Provides structure to the bread.

Ingredients
 

  • 2 C. Grated apples (1-2 large apples)
  • 2 C. All-purpose Flour
  • 3/4 C. Maple syrup (or honey)
  • 1 tsp. Baking soda
  • 1 tsp. Baking powder
  • 1 Tbsp. Cinnamon
  • 1/4 tsp. Allspice
  • 1 tsp. Salt
  • 3 eggs
  • 1/3 C. Coconut oil (melted and cooled)
  • 1/4 C. Applesauce
  • 1/3 C. Greek yogurt
  • 1 tsp. Vanilla extract

Cinnamon sugar butter:

  • 2 tsp. Cinnamon
  • 2 Tbsp. Sugar
  • 1/2 C. Butter (softened)

Instructions
 

  • Preheat oven to 350 degrees. In a medium bowl, combine the flour, baking soda, baking powder, cinnamon, allspice, ad salt. In a separate bowl, mix the eggs, maple syrup, coconut oil, apple sauce, Greek yogurt, and vanilla extract together. Mix until well combined. Fold in the grated apples. Stir in the flour mixture and mix until just combined. Pour batter into a greased 1 pound loaf pan and bake for 45-55 minutes, or until a toothpick comes out clean.
  • While the bread bakes, place softened butter, cinnamon and sugar into a food processor. Blend until smooth.
  • Let the loaf cook before slicing and enjoying! Save leftover butter in the refrigerator.
