Apple Oat Muffins with Cinnamon Oat Streusel

These apple oat muffins are hearty, warmly spiced, and topped with a buttery cinnamon oat streusel. Ready in under 40 minutes with simple pantry ingredients!

Ingredients
 

  • 1 Cup (82 g) Old fashioned rolled oats
  • 1 Cup (125 g) All Purpose Flour
  • 1/2 tsp. (3 g) Salt
  • 1 tsp. (5 g) Baking powder
  • 1/2 tsp. (2 g) Baking soda
  • 1 tsp. (3 g) Cinnamon
  • 1/2 tsp. (1 g) Allspice
  • 1/2 Cup (100 g) Sugar
  • 1/4 Cup (60 ml) milk (regular or plant based)
  • 1/2 Cup (100 g) Greek Yogurt
  • 2 eggs
  • 1 tsp. (4 g) Vanilla extract
  • 1/3 Cup (79 ml) Oil
  • 1/4 Cup (61 g) Applesauce
  • 1 Cup Grated apples (about 2 medium apples, extra liquid gently removed)

Oat Streusel:

  • 5 Tbsp. (71 g) Butter (Cold, cut into small pieces)
  • 1/3 Cup (73 g) Brown sugar
  • 1/4 Cup (31 g) All-purpose flour
  • 1/2 Cup (41 g) Old fashioned rolled oats
  • 1/2 Tbsp. (4 g) Cinnamon

Instructions
 

  • Preheat the oven to 425 degrees F. Line 12 muffin tins with muffin liners.
  • In a medium mixing bowl, combine the flour, rolled oats, salt, cinnamon, allspice, baking powder, and baking soda. Whisk together and set aside.
  • In a large mixing bowl, beat together the eggs and sugar. Add the oil, applesauce, Greek yogurt, milk, and vanilla extract. Mix until combined. Stir in the grated apples.
  • Pour the dry ingredients into the wet ingredients and stir until just combined. Do not overmix. Let the batter rest for 10 minutes.
  • While the batter rests, make the oat streusel. Combine the brown sugar, flour, rolled oats, and cinnamon in a bowl. Add the cold butter and cut into the mixture with a pasty cutter or fork until the mixture comes together.
  • Divide the batter evenly between the 12 muffin tins. Sprinkle the oat streusel generously over each muffin.
  • Bake at 425 degrees for 5 minutes. Then reduce the heat to 350 degrees F and bake for an additional 13-16 minutes, or until the muffins are fully set and a toothpick comes out clean.
  • Remove from the oven, let cool, and enjoy!
