Caprese Breakfast French Fries with Pesto Fried Egg
Crispy French Fries with layers of creamy burrata cheese, pesto, diced tomatoes and topped with a pesto fried egg and balsamic glaze. A easy breakfast or brunch recipe that can come together in under 30 minutes.
1.5lbsFrench Fries(frozen, can use more or less fries)
2Eggs
1Burrata cheese ball
1/4C.Tomatoes(diced)
Pesto(recipe below)
Salt and pepper(to taste)
Balsamic glaze(to taste)
Pesto:
1C.Fresh basil
1/4C.Pine nuts(toasted)
1/2of a Lemon(juiced)
1/4C.Parmesan cheese
1/4C.Olive oil
Salt and pepper
1garlic clove
Instructions
Prepare the fries according to package instructions. Once done, season the fries with salt to liking.
While the fries are cooking, make the pesto by combining the basil, pine nuts, parmesan cheese, olive oil, lemon juice, garlic clove, salt and pepper in a food processor. Blend until combined.
Add 1 tablespoon of the pesto for each egg into a skillet over medium heat. Crack the egg over the pesto. Cover and cook until the egg whites have fully set and the yolk has reached the desired doneness. Season the egg(s) with salt and pepper to personal taste.
To build the fries, add the crispy fries to a serving plate. Open the burrata cheese and break into small pieces to evenly add over the fries. Add a layer of diced tomatoes and drizzle of pesto. Top with the pesto fried egg(s) and then add a drizzle of balsamic glaze. Enjoy immediately.
