Carrot Cake Waffles with Maple Cream Cheese

These carrot cake waffles are packed with freshly grated carrots, warm spices and are topped with a sweet maple cream cheese. They are easy to make and perfect breakfast or brunch in the spring.

Ingredients
 

  • 2 1/2 C. Flour
  • 2 tsp Baking powder
  • 1/2 tsp. Salt
  • 1 Tbsp. Sugar
  • 1/2 tsp. Cinnamon
  • 1/4 tsp. Ground ginger
  • 1/4 tsp. Allspice
  • 2 C. Buttermilk
  • 1/4 C. Butter (melted)
  • 2 Eggs
  • 1 tsp. Vanilla extract
  • 2 Cups carrots (finely grated)

Maple Cream Cheese:

  • 4 Oz Cream Cheese (softened)
  • 3 Tbsp. Maple Syrup

Instructions
 

  • Combine the flour, baking powder, salt, sugar, cinnamon, ground ginger, and allspice in a medium mixing bowl. Whisk together and set aside.
  • In a separate large mixing bowl, add the eggs, buttermilk, cooled melted butter and vanilla extract. Whisk together until fully combined. Stir in the grated carrots.
  • Add the dry ingredients into the wet and stir together until just combined. Be careful not to overmix the batter. Let the batter rest while a waffle maker heats up.
  • Add a scoop (about 1/2 cup to 3/4 cup depending on the size of your waffle maker) to a hot waffle maker. Gently spread out the batter and cook until the waffle maker signals the waffle is done. Place the cooked waffles on a wire cookie sheet until ready to serve.
  • To make the cream cheese topping, beat the softened cream cheese in a medium bowl with a hand electric mixer on high speed until smooth. Add in the maple syrup and beat until smooth.
  • Serve the carrot waffles with a dollop of of the maple cream cheese and your favorite toppings such as butter, maple syrup, pecan or walnuts.
