A moist and flavorful orange loaf cake with chocolate chips. This recipe takes only about 10 minutes of prep time and makes for tasty sweet breakfast, snack or dessert.
1/2C. Neutral oil(avocado, canola or vegetable oil)
1/2C.Milk
2/3C.Sugar
1tsp.Vanilla Extract
1/4C.Orange Juice
2Tbsp.Orange zest
2C.All-purpose Flour
1/2tsp.Salt
1tsp.Baking powder
1/2tsp.Baking soda
3/4C.Chocolate chips(plus more to sprinkle over the loaf)
Instructions
Preheat the oven to 350 degrees F.
Combine all the dry ingredients (flour, salt, baking powder and baking soda) together in a medium bowl. Whisk together and set aside.
In a large bowl, add the eggs and sugar. Beat together with a stand mixer, electric hand mixer, or by hand with a whisk, for about 30 seconds. If using a whisk, whisk together for about 1 minute.
Add the oil, milk, vanilla extract, Greek yogurt, orange juice and orange zest to the egg and sugar mixture. Beat or whisk together until fully combined.
Pour the dry ingredients into the wet. Mix together until just combined. Add the chocolate chips and fold into the batter.
Pour or scoop the batter into a 9x5 lined with parchment paper (or well greased) loaf pan. Sprinkle over a few extra chocolate chips over the batter (optional). Bake for 45-55, or until the batter is fully set. When done, a toothpick will come out clean when inserted into the center of the loaf.
