Double Chocolate Zucchini Muffins

Moist zucchini muffins with cocoa powder, chocolate chips, and grated zucchini for a rich and flavorful muffin.

Ingredients
 

  • 1 3/4 C. (219 g) All-purpose flour
  • 1/2 C. (43 g) Cocoa Powder
  • 1/4 tsp. (1/4 tsp.) Allspice
  • 1/2 tsp. Cinnamon
  • 1/2 tsp. Salt
  • 1 tsp. Baking powder
  • 1/2 tsp. Baking soda
  • 1 C. (200 g) Plain Greek Yogurt
  • 1/2 C. (119 ml) Neutral oil (such as avocado, canola or vegetable oil)
  • 2 eggs
  • 1/2 C. (100 g) Sugar
  • 1 tsp. Vanilla extract
  • 3/4 C. (135 g) Chocolate chips
  • 1 1/2 C. (186 g) Grated Zucchini (extra liquid squeezed out)

Instructions
 

  • Preheat the oven to 400 degrees F. Line a 12 muffin tins with muffin liners.
  • In a medium bowl, combine the flour, cocoa powder, salt, baking powder, baking soda, cinnamon and allspice together. Whisk together and set aside.
  • In a large mixing bowl, add the sugar and eggs together. Whisk until fully combined. Add the Greek yogurt, oil, vanilla extract, and grated zucchini. Mix together. Pour the dry ingredients into the wet and stir until just combined. Fold in the chocolate chips. Let the batter rest for 10-15 minutes.
  • Divide the muffin batter into the 12 muffin tins. Bake at 400 degrees for 5 minutes. Then reduce the heat to 350 degrees and bake for additional 12-15 minutes, or until the muffins are fully set.
  • Remove from the oven and let cool before enjoying.
