Easy Banana Muffins with Chocolate Chips

Soft and moist banana muffins with chocolate chips made with maple syrup and Greek yogurt. Bakery-style results right from your own oven!

Ingredients
 

  • 4 ripe bananas
  • 2 eggs
  • 1/3 Cup Maple Syrup
  • 1 tsp. Vanilla extract
  • 1/3 Cup Oil
  • 1/3 Cup Greek Yogurt
  • 2 1/4 Cup All-purpose flour
  • 1 tsp. Baking soda
  • 1/2 tsp. Salt
  • 3/4 Cup Chocolate Chips

Instructions
 

  • Preheat the oven to 425 degrees F. Line a 12-cup muffin tin with muffin liners.
  • In a medium bowl, combine the flour, salt, and baking soda. Stir together and set aside.
  • In a large mixing bowl, add the ripe bananas and mash them well. Add the eggs, oil, Greek yogurt, vanilla extract, and maple syrup. Mix until fully combined.
  • Pour the flour mixture into the wet ingredients and stir until just combined. Be careful not to overmix.
  • Fold in the chocolate chips.
  • Divide the batter evenly between the 12 muffin tins.
  • Bake at 425 degrees for 5 minutes. Then reduce the heat to 350 degrees and bake for an additional 14-16 minutes, or until the muffins are fully set and a toothpick comes out clean.
  • Remove from the oven, let cool, and enjoy!
