2C.Old fashioned rolled oats1 3/4 C. of oatmeal flour
3/4C.Maple syrup
1tsp.Baking soda
1/2Tbsp.Baking powder
1Tbsp.Cinnamon
1/4tsp.Allspice
1tsp.Salt
3eggs
2Tbsp.Coconut oil
1/4C.Applesauce
1/3C.Greek yogurt
1tsp.Vanilla extract
Instructions
Preheat oven to 350 degrees.
Add the oats into a food processor or blender and blend into a flour.
In a medium bowl, combine the flour, baking soda, baking powder, cinnamon, allspice, add salt.
In a separate bowl, mix the eggs, maple syrup, coconut oil, apple sauce, Greek yogurt, and vanilla extract together. Mix until well combined. Fold in the grated apples. Stir in the flour mixture and mix until just combined. Let batter rest 5 minutes. Pour batter into a greased 9.5 by 5-inch loaf pan and bake for 45-50 minutes, or until a toothpick comes out clean.
Let the loaf cool slightly before slicing and enjoying!
