Healthy and Easy Oatmeal Apple Bread Recipe

A gluten-free oatmeal bread packed with grated apples and fall spices! Perfect for breakfast, snack or dessert!

Ingredients
 

  • 1 C. Grated apples (About 1 apple)
  • 2 C. Old fashioned rolled oats (1 3/4 C. of oatmeal flour)
  • 3/4 C. Maple syrup
  • 1 tsp. Baking soda
  • 1/2 Tbsp. Baking powder
  • 1 Tbsp. Cinnamon
  • 1/4 tsp. Allspice
  • 1 tsp. Salt
  • 3 eggs
  • 2 Tbsp. Coconut oil
  • 1/4 C. Applesauce
  • 1/3 C. Greek yogurt
  • 1 tsp. Vanilla extract

Instructions
 

  • Preheat oven to 350 degrees.
  • Add the oats into a food processor or blender and blend into a flour.
  • In a medium bowl, combine the flour, baking soda, baking powder, cinnamon, allspice, add salt.
  • In a separate bowl, mix the eggs, maple syrup, coconut oil, apple sauce, Greek yogurt, and vanilla extract together. Mix until well combined. Fold in the grated apples. Stir in the flour mixture and mix until just combined. Let batter rest 5 minutes. Pour batter into a greased 9.5 by 5-inch loaf pan and bake for 45-50 minutes, or until a toothpick comes out clean.
  • Let the loaf cool slightly before slicing and enjoying!
