Homemade Cherry Crisp with Chocolate Chips

An easy cherry crisp with an oat and chocolate chip topping.

- 3/4 C. Old fashioned Rolled Oats
- 1/3 C. Wheat Flour
- 1/4 C. Butter cold and cubed
- 1/2 tsp. Cinnamon
- Pinch of Salt
- 1/3 C. Brown sugar
- 1/4 tsp. Nutmeg
- 3/4 C. Chocolate chips
Cherry Filling:
- 5 C. Cherries pits removed
- 1/3 C. Honey
- 1 tsp. Vanilla extract
- 1 Tbsp. Lemon Juice
- 2 Tbsp. Cornstarch
Preheat oven to 350 degrees F.
Combine the pitted cherries, honey, nutmeg, cinnamon, cornstarch, and vanilla extract together directly into a greased 8-inch baking or pie pan. Gently stir together until all the ingredients are combined.
To make the topping, add the oats, flour, cinnamon, salt, brown sugar and nutmeg together. Stir. Add in the cold butter pieces and cut into the oat mixture with a pastry cutter or fork until the butter is broken down into small pieces.
Evenly sprinkle the topping over the cherries. Place in the oven and bake for about 35 minutes or until the oat topping is slightly browned and the cherries mixture is bubbling. Remove from the oven and let cool slightly before serving. Enjoy on its own, with a scoop of vanilla ice cream, whipped cream or some Greek yogurt!
